A food festival is a festival that uses food, is usually held annually and often has produce as its central theme. Many Indian restaurants have started organising such festivals to attract customers towards their restaurant.
Chef Gautam Chaudhary, Executive Chef, Hyatt Bangalore says “Indian cuisine has a plethora of recipes, each unique to a state and geography. Festivals are the perfect occasion for restaurants to showcase India’s diverse cuisines. Guests and patrons usually love to try out unique recipes during festivals, rather than opt for the usual fare. It’s a great platform to foster cross cultural ties through food.”
The offer during the festive season primarily depends on the meal period, the food and cuisine as on offer, the market segment that the restaurant is targeting, etc. Many restaurants have dinner buffets and lunch buffets as offers and if the festival extends over weekends, then Sunday brunch showcases the festival special menu.
Talking about the processes involved, Chef Chaudhary further elaborates “There are various parameters that we explore before deciding on the promotion that needs to be done, like interacting with our patrons and understanding what they are looking for which is different everytime. As the guests today are well travelled, they know very well as to what they want. Then we do our research on that concept and pick up the favourites and unusual items to showcase in the special menu.”
The festival is organised at restaurants and the offer they get during those periods help the customers in deciding on a particular restaurants.
