In 2002, India’s per capita coffee consumption was just eight grams—most of it instant. Two decades later, the picture looks very different. Cafés are thriving, consumers are more discerning, and both coffee and tea chains are reshaping how Indians socialize, work, and unwind. The café market is subjected to grow by USD 26 Billion by 2029 with a CAGR of 8.3%.

“It’s been a sea of change,” said Ranjit Talwar, Commercial Director and India Head, Coffee Bean and Tea Leafby recalling his early days. “Back then, we had to explain to customers what an espresso was. Today, people walk in knowing exactly whether they want a cappuccino, cold brew, or even a nitro infusion.”

Smaller Town: Bigger Consumption
The café market is now thriving with competition. Rajat Agrawal, CEO, Barista, who leads one of India’s largest homegrown chains added, “We started in 2000, and today we operate 480 stores across 160 cities, even beyond India. But what excites me most is that nearly 60% of our growth in the last five years has come from Tier 2 and Tier 3 towns.”

Consumers outside metros are equally well-traveled and digitally savvy these days. They exactly know what they want, whether it’s about burger with a perfect patty or the finest brew to knowing the origin of the coffee, customers are well travelled.

Food goes hand-in-hand
If coffee is the hero of a café, food is fast becoming the co-star. Talwar explained, "Think Batman and Robin. Coffee will always be Batman. But without Robin, without food, the experience feels incomplete.”

Food contributes 25–30% of revenues, with the share rising wherever fresh, healthier options are integrated.  Agrawal added, “We’ve made conscious efforts to introduce fresh food and zero-sugar beverages. Gen Z especially is looking for healthier choices, and that’s where the opportunity lies.”

Dessert Culture Meets Café Culture
Dessert and bakery brands are finding their sweet spot in this café boom. Highlighting her views, Sana Bector Parwanda, Co-Founder & Director, Zoet said, “We started organically when international chains approached us. Today, we supply everything from croissants to sourdough breads. The Indian customer is discerning—they want desserts without preservatives, as fresh and high-quality as the coffee they’re drinking.”

Creating Differentiation
In a competitive market, differentiation often comes from signature offerings. Parwanda shared, “We launched a family recipe as a signature cake for a global brand. I wasn’t sure if people would take to it, but it ended up outselling croissants in their coffee shops. That’s the power of creating something memorable.”

Consistency is Key
Scaling up isn’t just about more outlets—it’s about delivering the same experience everywhere. “Consistency of supply is the biggest speed breaker. That’s where partners like Sana play a role; ensuring cafés can grow without compromising on quality,” pointed Talwar by adding that while coffee cafés continue to expand rapidly, tea is quietly scripting its own growth story. 

“It’s not only coffee chains; individual tea formats are mushrooming everywhere. It’s a phenomenal time to be part of this industry of stimulation,” he mentioned.

Collaborations as Catalysts
Partnerships are driving excitement in the café space. Putting up his views, Agrawal said, “We recently collaborated with Yuvraj Singh’s Toodles brand for health bars and trail mixes. Celebrity associations bring footfalls, but more importantly, they add credibility and recall value. Other than that, we’ve done collaborations with U.S. Pistachio and Cranberry councils, creating seasonal desserts and beverages. These collabs bring innovation and connect us to global trends.”

What started as a handful of coffeehouses has grown into a multi-billion-dollar café ecosystem of bakeries, suppliers, and investors. The future belongs to brands that balance authenticity with scalability - offering signature products, strong supply chains, and digital-first engagement.

We are always up with the trends and new concepts. We make everything in-house including sauces as we don’t use any preservatives. We are coming up with labubu coffee soon. We have our own supply chain and have temperature vans that ensure that the quality is as per our standards.

Our streamlined operations make expansion seamless. A dedicated Chef Trainer ensures all new chefs meet our standards, while a raw materials checker uses software-backed image uploads for quality control. Each outlet is led by a Head Chef and supported by clearly defined team roles—from hiring to daily tasks—so staff is well-prepared when new locations open.

Challenges
The major challenge is hiring. To get good people on board was a challenge. It took a while to get good people. Once we were established, people approached us. Good location is another challenge as rentals are high, and licensing takes time.

What’s New at the Biz 
The brand has launched two new sub-brands¬- Catering by Honey and Dough, Say Cake by Honey & Dough.

Catering by Honey and Dough
We have launched these few months back. All our business is inter-related. We have done 4-5 caterings till now. We saw a gap that there are hardly any caterers who sell in reasonable price for small parties, high tea or anything. We are focusing on box meals to cater to office parties or birthday parties.

Say Cake by Honey & Dough
We have come up with the new brand ‘Say Cake by Honey & Dough’ where we sell customized and personalized cakes. It’s a cloud kitchen model. We are available on Zomato and Swiggy. 

Expansion Plans
With our production facility based here, Delhi offers a strong potential for growth. Our focus is to expand within the region—covering areas like Faridabad, Chandigarh, and Greater Noida—before moving into other cities. Expansion will happen in phases, with a goal to open 25 outlets in Delhi before entering Maharashtra. By the end of this year, we aim to launch 5–10 new outlets across Delhi NCR, through a mix of franchise and bootstrapped models.

Trends to see
Matcha is on trend; it’s a booming market. It’s high on antioxidants. There’s a room to grow more in this segment.

“Items like rose thandai, mango cake, gond-based drinks, and amaranth salad are introduced in response to what the body craves and what customers enjoy during specific times of year. Customer feedback helps shape these changes organically,” added Akshi.

Pairing coffees with baked goods
Coffee and pastry are being curated more intentionally than ever before. Eesha Sukhi, Director, The Bluebop Café said, “Curated pairing menus for e.g., espresso with chocolate tarts, pour-overs with almond croissants are on rise as brands can promote combo deals to drive trial and boost average spend.”

Adding to this, M. Balaji, Co-Founder & CEO, Dolci, Bengaluru said, “You’ll find options like bagels, flaky croissants, spiced tea cakes, and even Indian-inspired bakes—think masala breads or cardamom-infused pastries—that are designed to complement specific brews or blends.”

Cafés are doing pairings to enhance both flavour and guest experience. This level of thoughtfulness encourages exploration, increases average spend, and elevates the café from a transactional pit stop to a destination.

Overcoming Challenges
Running an in-house bakery comes with operational hurdles—early prep cycles, space limitations, skilled manpower, and maintaining consistency. Bajaj highlighted, “The key is to build a focused menu, invest in versatile baking equipment, and cross-train staff to ensure flexibility.”

Baked goods also have a shorter shelf life, so managing wastage becomes crucial. “There’s food safety and hygiene—something that’s under increasing scrutiny. If you don’t get that right, it can lead to serious consequences, including license cancellations,” added Balaji.  Ingredient sourcing is another hurdle, especially with fluctuating prices and supply inconsistencies.

The Business Perspective
Exact numbers vary from brand to brand, but in-house bakeries definitely help increase average spend per customer. While Sukhi pointed that in-house bakery sales can contribute 20%–30% of total revenue, depending on the café’s focus. 

“India’s bakery market is already valued in billions, and it’s growing steadily—around 9% year-on-year. So, for cafés, having a bakery section isn’t just nice to have—it’s becoming essential to stay competitive,” added Balaji. 

Signature bakes often drive impulse buys, have higher margins than beverages, and perform well across both dine-in and delivery formats. “In-house bakery sales can contribute anywhere between 25% to 45% of the total café revenue, depending on how integrated and visible the offering is,” added Bajaj.

Pancakes have been very famous in the US and Europe. The joy of biting into freshly baked fluffy pancakes, layered with fruits, maple syrup, or whipped cream is unparalleled. This is what struck Co-founders Akashdeep Dan and Sundeep Singh at Uncle Peter's Pancakes in 2018. “At that point, only a few pancake brands were there and they were only serving mini pancakes. The other option was to head to high-end cafes and restaurants to enjoy pancakes. This gave us the confidence to go ahead with pancakes,” shared Sundeep Singh who started experimenting at events, tried making sauces, took photos, and asked people whether they’d like to have something like this and after seeing great responses they opened their first outlet in September 2019 in Indiranagar, Bangalore.

Recently, the brand ventured into the Shark Tank India season three by cracking a joint deal of Rs 60 lacs for 3% equity and 3% royalty until Rs 1.2 cr is recouped from three sharks; including Anupam Mittal, Vineeta Singh and Namita Thapar. Excerpts from the interview:

Uncle Peter's Pancakes

How has been the journey so far?

Over the last five years, the brand has built a solid menu offering at least 200 pancake varieties, besides crepes and waffles. It often changes the menu to surprise its clients, including summer and winter special varieties based on seasonality. Such is its popularity that it sells 5,000 pancakes on average per day, with orders increasing on weekends. From five outlets in 2021, to 40 outlets until April 2023 across 15 cities in India, it has expanded rapidly.

How much money have you put into starting the concept?

We have put around 10 lacs initially to start the business. 

Why franchising? What's the franchise fee per outlet?

Franchising is a method that organizations utilize to distribute their products and services via retail outlets owned by dealers or operators, known as a franchisee. The company that allows the independent third-party operator to sell its products and services using its name and techniques is the franchisor. This method enables big companies to branch out and expand while enabling individuals to run the franchise with a proven formula for success. In many cases a franchise reaches the break-even point faster than an independent business because of the established brand name. 
Our franchise fee is 5 lakhs for 5 years. 

On Fund Raised at Shark Tank India

After investment we have 3 main focus areas to work on:
Operations excellence, although we have started the journey but to excel, we need to work on supply chain and production to strengthen our franchise network. 

Tech enablement inside out, for franchise partners best technology solution and for customers we want to ensure user friendly platforms for ordering with loyalty programs. 

Marketing- Till now we have focused on our product and franchise network but still there is a lot of work on marketing activities so we would like to leverage the investment to reach more customers and increase the awareness about the brand and pancakes.

What's your expansion plan?

Uncle Peter’s Pancakes may now be a leading player in the category but still we have a long way to go. From two of us in 2019, there are more than 150 employees that work with Uncle Peter’s Pancakes across all its locations. We want to establish the brand at 100-plus locations by the end of 2023 and at 350-plus locations by 2025.

Three Interesting Things in the Restaurant Industry 

Over the course of my journey, there are many new findings that I have come across, to name a few: 

New innovative and path-breaking cuisine - This will always excite the guests to try something new. If we are able to incorporate these innovations into our cooking styles, then it's well and good. 

Exotic and new ingredients - With the discovery of more new ingredients and experimentation with new spices and flavours, and mixing the various regional cuisines to create something new, I am sure, in the future, we will see more new dishes. 

Health and diet conscious recipes – In today's world, as everyone is becoming more health conscious and fitness enthusiasts, the use of fresh and organic ingredients is on a rise. Now, deep-fried food is not much preferred. People are moving into more fresh juice and other healthier options.

Menu Planning for an Alfresco-style Café

Since an alfresco-style café is more of a casual and outdoor type, hence, people visit it to have a short bite and a good time with friends, family and talk and laugh over things. 

So a menu for this style should include short eats, not something that is heavy, have more variety of beverage available and also choose the food type that will get you into a relaxing mode. The food type should be plain and simple with the use of fresh ingredients and not too much of a complex cooking method. 

Retaining the Originality 

The key is to retain the true essence of Middle Eastern flavours by using only authentic and home-grown middle eastern spices, condiments and other key ingredients. Using native cooking methods also plays an important role in preparing authentic middle eastern cuisine and retaining the originality. 

Familiarities between Indian and Afghani Food Culture 

The Afghani and Indian food cultures are quite familiar. Most of the Indian cooking style is influenced by the Middle East from the time of kings. 

So the similarities lie in the use of ingredients, the spices used for marinating and for the use of gravy, are similar. The cuisines made in both places use fresh cream and curd in the cooking methods; tandoor clay pot is used for tandoor items. 

With regard to rice items, the dum-style of cooking for biryani and pulao remains the same for both the regions.

Strategy to Get Repeat Customers

We at Signature Club Resort, focus on customer service, this includes making the food as per the guests' requirement - vegan, vegetarian or dietary restrictions. And, maintain consistency over the course of time.

Adding Truffle oil and Bhooth Mirch as New Ingredients on the Menu

I always try to experiment with new ingredients to see which foods and ingredients will match well and give a unique taste. 

To name a few: Use of Truffle oil for exotic salads, Saffron for sweet and desserts, Pine nut and Ariobrio rice for risotto and Bhooth mirch for someone who likes a bit more spice to their food.

It is a very exciting space to be in. F&B as an industry is just beginning to take off. Everybody in the restaurant industry is in the right place especially the people who have years of experience because they are aware of the challenges and are better equipped to face the future. There is a steep learning curve in the restaurant business, as 90% restaurants don’t survive more than 10 years.  Nonetheless, it is a rewarding time to be in the industry now.

When you started, what initially triggered you to run this business? Was it Food or Beverages?

It was purely entertainment. I got into this business from an entertainment perspective, wanting to create places where people thought couldn’t be entertained. My idea was to build a space around human conversations. It was not about the food or the drink. Our first outlet was called Mocha- Coffees & Conversations. Creating a Space which was conducive for conversation was my triggering point to be in this business.

With such fine concepts like Mocha, Smoke House Deli & Social, what was the idea that led to the birth of such landmarks?

Earlier, there was a thought that if you are a brand, you need to provide the exact experience. Nowadays, people get tired of monotony, and always in the search of something new. With each Mocha & Social, we try to explore a new dimension which is unexpected in terms of design language that sets the tone for a theme. We are more into the language of the design rather than the theme.

With a lot of developments happening in the industry, where are we still lagging behind?

There are times when people try to exaggerate and take things too easily. There is no substitute for focus and hard work. Your brand should deliver what it says on the box. When you go out for a particular experience, you shouldn’t be given more than what you want or vice versa. There is no room for anything which is lower than the top 10 in each category.

Do trends fascinate your business?

I have always tried to stay away from trends. My definition for trend means it will go and come. I have followed people and tried to understand what they want. Likewise, figuring out what people want is not trend forecasting, it is rather demand and supply. 

Tell us about your future prospects?

I plan not to plan for more than 3 weeks. Everything is very dynamic and evolving. We are not operating in a vacuum. You are responding to the environment and the environment is just changing all the time. You have to make your plan bend down to the universe. So, as I say, if you have a plan longer than 3 weeks, chances of not working out are more.

With Technology taking an upper hand in this industry, where do you see the F&B Industry heading?

I definitely see the consumption pattern changing in the near future. Eating more meals out of home will increase while cooking at home will be a tedious task. Right from buying vegetables to cutting them, people will prefer ordering or eating out. Evolution is soon to catch up in India.

Have you ever thought of turning your addiction into a business? You have always followed the characters in your favourite show, lived the life their way, dressed the way as they do but, Kolkata based teen Mahima Bachhawat, a 19 year old B.Com student from St. Xavier’s College made it possible by starting a cafe based on her addiction to the favourite F.R.I.E.N.D.S show together with her brother Aditya and her cousins to give shape to her addiction to the show.

When did you planned to open the show?

I was a big fan of F.R.I.E.N.D.S show and thought to give it a shot by starting a cafe together with my brother who is an MBA and wanted to do something in the hospitality business. We shared this idea with our parents and asked him to help us in this because there were many fans of the show in the city and all over in India.

What are the famous design elements that you taken form F.R.I.E.N.D.S?

Pat the Dog, the iconic orange couch, the doors that resemble those in Monica’s and Chandler’s apartments, Phoebe’s bicycle – and many other objects have been brought in from all parts of the country, meticulously designed and put up. It took us almost four months to decide on this and start this cafe.

How is the menu designing done?

If you come to the show we have included the dishes that the characters used to eat. ‘Ross Geller’s Moist Maker sandwich’ – from the episode in which the palaeontologist’s lunch would be stealthily eaten every day – has been featured on the menu and is selling like hot cakes. We sell 10-20 of those in a day and send out each with a note that reads ‘Knock-knock. Who’s there? Ross Geller’s lunch. Ross Geller’s lunch, who? Ross Geller’s lunch, please don’t take me. Okay?’ and people are finding it hilarious.

What is the uniqueness of the cafe?

Keeping our favourite F.R.I.E.N.D, Phoebe’s food preference in mind, we have decided to keep the cafe an all vegetarian cafe.

What is the plan going forward?

We have whipped up the cheesecake made famous by Rachel and Chandler by sourcing it from a local bakery, Mama’s. We are also planning to add one new item every week and ‘Sing along Saturdays with Phoebe’.

How is the response so far?

We opened on 22nd May and within two weeks we are getting great response. We are all over the place today. We are seeing 300-400 footfalls on weekday and 500-600 on weekends.

Who is your target customer?

We are targeting the school and college crowd. But, we are amazed to see 60+ people also visiting our cafe, family coming. So, it’s all who are F.R.I.E.N.D.S fan.
