Novotel Kolkata Hotel & Residences has introduced a new menu at its in-house restaurant, The Ministry of Kebabs (MOK), in January 2026. The update reflects a broader industry focus on experiential formats, regional authenticity, and curated food storytelling.

The refreshed offering positions MOK within the growing segment of experiential Indian dining, where preparation techniques and service formats play a central role in guest engagement. The concept continues to draw on traditional kebab-making methods, including the use of tandoor, sigree, and tawa, while integrating tableside service elements such as a kebab trolley to enhance interaction and perceived value.

The menu emphasizes regional diversity and technique-driven cooking. The vegetarian portfolio includes items like Shahi Palak Chilgoza Tikki, Guntur Mirchi Tandoori Paneer, and Bharwan Dhingri, reflecting a mix of Awadhi and South Indian flavour profiles. On the non-vegetarian side, dishes such as Dhaniya aur Pudina ke Seekh, Rajwada Kalmi Tandoor, and Kundapuri Byadgi Prawns highlight regional sourcing of spices and marinades, aligning with the broader industry trend of hyper-local storytelling.

The main course selection continues this positioning with legacy dishes such as Subah-e-Awadh Nihari and Subz Korma Awadhi, alongside Dal MOK, which reinforces familiarity while maintaining consistency in premium dining formats. The inclusion of Kolkata Style Chicken Biryani and Subz Dum Biryani reflects the property’s effort to localize its offerings while retaining pan-Indian appeal. Supporting elements such as traditional breads, raita, and desserts like Phirni and Kulfi contribute to a complete dine-in format designed to increase average order value and guest retention.
