A new seaside dining destination, Istorea by the sea, has opened along the North Goa coastline, introducing a hospitality format that combines minimalist design, global cuisine, a curated bar program, and music-led evenings. Positioned as a day-to-night venue, the property focuses on coastal dining and sunset-driven footfall, a growing trend in Goa’s premium food and beverage market.

Designed around a restrained, nature-forward aesthetic, Istorea by the sea uses stone textures, warm wood elements, and neutral colour palettes to integrate with its shoreline setting. The space is planned to respond to natural light conditions, with sunset hours emerging as a key operational window as the ambience shifts from daytime dining to evening-led consumption.

From a food and beverage perspective, the menu follows a global format with coastal influences. Offerings include Oak Ash Chèvre Salad, Stir-Fried Crispy Lotus Stem, Kimchi Chicken Bao, Recheado Pomfret, Emerald Ember King Fish, and Chicken Chorizo & Roasted Shallot Risotto. The menu also extends across pizzas, pastas, and desserts such as Tres Lune Delight and Pistachio Blossom Cheesecake, catering to a wide dining window and mixed consumer profiles.

The bar program has been positioned as a core revenue driver, with cocktails such as Smoky White Orange Old Fashioned, Petal & Pearl, Coco Lune, and Spiced Canopy designed to align with the venue’s sunset and evening transition. The beverage strategy focuses on balance, flavour clarity, and visual presentation suited to social and leisure-led dining occasions.

Post-sundown, Istorea by the sea shifts into a music-focused environment, hosting international and domestic Afro, house, and techno acts. Rather than operating as a traditional nightlife venue, the concept integrates music as part of the overall dining and social experience, reflecting a broader move towards hybrid hospitality formats in coastal markets.

The venture is led by managing partners Sudhansh Amrani, Aniket Sakpal, and Sagar Pawar, with ownership and investment support from Ketan Ruparel and Deepak Thakker. The group is positioning Istorea by the sea as a destination-led property where repeat visitation is driven by atmosphere, timing, and experiential consistency.
