
Los Cavos, Mumbai’s well-known Latin-American dining spot, is set to open its doors in Bengaluru’s Indiranagar this August. The new venture by V&RO Hospitality promises a menu rich in Peruvian cuisine and innovative cocktails, with Chef Rafael Estremadoyro García, a two-Michelin star chef, leading the culinary team.
Chef García, known for his expertise in Nikkei cuisine—a fusion of Japanese, Spanish, and Italian influences—will offer a vibrant dining experience at Los Cavos. The menu is designed to reflect the rich culinary traditions of Peru, while incorporating global flavors. Signature dishes include Beef Carpaccio, Hamachi Tiradito, Los Cavos Ceviche, and Umami Corn Ribs for appetizers, with Lamb Chops, Gochujang Carbonara, Pork Belly with Chaufa Rice, Lomo Saltado, and Beef Steak with Bone Marrow among the main courses.
The restaurant’s beverage program, centered around tequila, mezcal, and pisco, offers cocktails that pair seamlessly with the menu. Guests can enjoy classic options like the Pisco Sour or explore unique creations such as Picante, Chilcano, and Mexican Revivor. Desserts like Churros, Tiramisu, and Al Fagor provide a sweet conclusion to the meal.
The atmosphere at Los Cavos is designed to reflect the vibrant culture of Latin America, featuring colorful décor, live music, and an energetic vibe. Dawn Thomas of V&RO Hospitality commented, “We've meticulously crafted an experience that combines Nikkei cuisine with the enchanting stories of Latin America. Following its success in Mumbai, the expansion to Bengaluru is part of Los Cavos' broader strategy to introduce unique dining concepts across different cities.
