
Shangri-La Eros New Delhi’s Italian restaurant, Sorrento, will feature a special culinary collaboration from November 20 to 24, 2024, showcasing the expertise of Michelin-starred Chef Mattia Bianchi. Known for his innovative approach to Italian cuisine, Chef Bianchi is the Executive Chef at Ristorante Amistà in Verona and brings his refined culinary philosophy to India for this limited engagement.
Chef Bianchi, born in 1987 in the Valpolicella region of Italy, combines his Venetian culinary heritage with global influences, including Oriental elements. His five-day residency at Sorrento will provide guests with an opportunity to experience a thoughtfully curated menu that emphasizes sustainability, authentic ingredients, and artistic presentation.
The degustation menu features a five-course selection beginning with appetizers such as Caprese Cloud or Woodland Velvet salad, followed by Herbs Whisper’s Risotto. Artisanal pasta options include Fusilli Rock n Roll and Fusilli Citrus. Main courses offer choices like Bitter Bliss, a combination of roasted baby gem squash, caper fruits, pine nuts, and beurre blanc sauce, or Sunlit Chicken Rhapsody, which includes chicken supreme, butternut squash, and leeks in a beurre blanc sauce.
For those preferring à la carte options, the menu highlights include Mediterranean-inspired dishes and signature pasta selections such as Fusilli Rock n Roll. These dishes showcase Chef Bianchi's ability to blend traditional Italian flavors with contemporary techniques.
Chef Bianchi’s culinary journey spans globally recognized establishments, including London’s Cecconi’s Restaurant and Australia’s Rockpool, Aria, and Bentley Restaurant. He earned a Michelin star in 2020 at Ristorante Amistà and has collaborated with Italy’s renowned Chef Enrico Bartolini, known for holding 13 Michelin stars. His recent projects include the “Food for Art” initiative and “Riso in Bianco,” featured at the Arena Opera Festival.
Currently leading the kitchen at Ristorante Amistà, Chef Bianchi continues to push culinary boundaries by combining Venetian traditions with modern elements. His residency at Sorrento reflects his commitment to contemporary Italian gastronomy and promises an engaging dining experience for guests.
The special menu is available for lunch and dinner, priced at Rs 4,000 plus taxes per person.
