In response to this change, NŌDO – Ramen, Sushi, Dimsum has launched in Khan Market, positioning itself as India’s first dedicated grab-and-go Pan-Asian kitchen.

The concept is built to operate between quick-service and casual dining, targeting consumers who want access to global cuisines without committing to a traditional dine-in experience. While Asian food categories such as sushi, dimsum, and ramen have seen consistent demand in India, they have largely been limited to full-service restaurants or delivery-focused formats. A format designed specifically for portability and speed has remained underdeveloped.

NŌDO’s operating model focuses on addressing this gap. The kitchen uses a combination of centralised preparation and on-site assembly to maintain consistency while ensuring faster turnaround. Packaging is designed to support takeaway and delivery efficiency, with sushi placed in structured trays, dimsum packed in sealed boxes, and ramen served in spill-proof containers.

Shivang Gupta, Founder of NŌDO, said, “We built NŌDO around a simple observation—people still crave quality Asian food, but they don’t always have the time for a traditional dining experience. Our goal was to create a format where speed, consistency, and flavour coexist without compromise. From how the ramen is assembled to how the sushi is packed, every detail is designed for convenience without losing authenticity.”

Ruhi Gupta, Co-founder of NŌDO, added, “We believe NŌDO is not just launching a kitchen, but introducing a new way of consuming Asian food in India. The grab-and-go format has been missing in this category, and we’ve built NŌDO to fill that gap with precision. It’s fast, it’s consistent, and it’s designed for the pace of urban life—without losing the depth and authenticity that people expect from pan cuisine.”

The menu strategy is focused on three categories—sushi, dimsum, and ramen—allowing operational clarity and faster service. Ramen is positioned as a key offering, with customisation options across broths, noodles, and toppings. One of the highlighted dishes is the Kimchi Umami bowl, combining fermented kimchi broth, gochugaru spice, greens, and a jammy egg, with choices including wheat noodles, udon, or pad thai, along with protein options such as tofu, jammy egg, or cheese.

The broader menu includes flavour profiles ranging from kimchi-based broths and tonkotsu-style preparations to Thai coconut-based curries. Sushi offerings, grouped under The Tokyo Street section, include vegetarian and non-vegetarian rolls such as asparagus tempura, avocado cream cheese, katsu chicken, and seafood dynamite. The dimsum range features options like cream cheese with chilli oil, Thai nutty vegetable, charcoal chicken, and butter garlic prawn.

The beverage menu remains limited, focusing on quick-serve options such as fruit-based drinks including lychee and grape. The brand is targeting high-density urban markets where speed, consistency, and delivery readiness are key drivers of demand. By limiting the menu to a few high-demand categories and building operations around efficiency, NŌDO is testing the scalability of a grab-and-go Asian food format in India’s evolving foodservice landscape.
