MasalDani, positioning itself in the premium smart-casual segment. The outlet draws its core idea from the traditional Indian spice box, or masaldani, and builds its menu and experience around regional spice profiles and sourcing.

The restaurant follows a product-first approach where spices form the foundation of each dish rather than acting as supporting elements. The menu spans multiple regional cuisines across India, including coastal, northern, eastern, and desert food traditions, with a focus on heirloom spices and region-specific flavour profiles. The offering avoids fusion positioning and instead focuses on maintaining authenticity while presenting dishes in a contemporary format.

The beverage program complements the food with spice- and botanical-led formulations, incorporating ingredients such as cardamom, saffron, and cumin to align with the broader menu narrative. From an operations perspective, the format reflects a growing trend in the hospitality sector where ingredient traceability and regional storytelling are used to differentiate dining experiences.

These include Dal Pakwaan featuring asafoetida, Mathania chilli, and pipli from the Sindhi region; Jackfruit Kakori Kebab using khus root, stone flower, and sandalwood from Lucknow; Tandoori Hari Machi combining Asian aromatics with Indian techniques; Tandoori Gobi Musallam built on Awadhi spice blends; and Badami Bhatti Dum Murgh influenced by Hyderabadi Mughlai flavours.
