
Varsoo opens in Mumbai. It’s a 60-seater heritage restaurant by restaurateur Pinky Chandan Dixit. Located in a restored 200-year-old space in the city, the restaurant brings together inherited regional recipes, seasonal Indian flavours, and contemporary dining sensibilities. Designed by Saloni Kothari of Studio SKO, Varsoo aims to offer diners a soulful experience rooted in nostalgia, tradition, and modern comfort.
The name Varsoo, meaning “inheritance”, reflects the restaurant’s philosophy of preserving culinary memories while presenting them in a format suited to today’s diners. Conceived as a deeply personal project by Dixit, the restaurant draws inspiration from recipes, flavours, and food traditions passed down through generations.
The menu reimagines familiar comfort dishes through an intuitive and contemporary lens. Signature offerings include Moong Dal Khichdi, Ravioli Dal Dhokli, Makai ki Raab, Moong ka Pani, and Peru Ananas ki Chaat. Traditional farsaan preparations such as Rassa Wali Moong Panoli, Dhokla, Muthiya, and Handvo are presented with modern touches while retaining their regional authenticity.
Adding an interactive element to the dining experience is a live chaat counter alongside an open kitchen section dedicated to dishes like Panki, allowing guests to experience the aromas, textures, and craft of traditional cooking up close. A dedicated low-calorie section introduces lighter offerings such as Jowar Pita Pockets, while faraal dishes cater to fasting traditions with a contemporary approach.
Seasonality plays a central role in the restaurant’s offerings, particularly through its mango-inspired specials. Seasonal dishes include Mango Fajeto, Keri Masala Bhaat-Fajeto Meal, Kela Kaju Karela Shaak with Aamras, and Mango Sandesh Ravioli.
The beverage menu complements the food with nostalgic Indian flavours such as fresh sugarcane juice with ginger and lemon, Kokum Chaas, Jamun Panha, and Saffron Lemonade. Desserts continue the indulgent experience with Jalebi and Rabdi, Mohanthaal, Ghewar Shrikhand Tart, Akhrot Halwa with Kulfi, and seasonal fruit ice creams. The restaurant features two indoor dining sections, an intimate outdoor seating area, and a convertible private dining space for gatherings and celebrations.
“As much as I love traditional Indian food, I wanted people to enjoy just one dish at a time—complete in itself, without feeling overwhelmed. Food, for me, has always been about comfort, familiarity, and the little details that make a meal feel whole,” says Pinky Chandan Dixit, Founder of Varsoo.
