Restaurant India News: TheySee Opens in Hyderabad with a Fresh Take on Modern Indian Dining

TheySee, has launched in Hyderabad, offering a concept built around how food is both seen and experienced. The idea explores how today’s generation of Indians expresses identity through food, blending traditional roots with modern perspectives. The name “TheySee” is a play on “Desi” and reflects how Indian culture is viewed through a global lens. The space aims to feel both nostalgic and contemporary, encouraging guests to rediscover familiar flavours in new ways.

The kitchen is led by Chef Suryansh Singh Kanwar, whose menu focuses on ingredient-driven and soulful cooking. His experience cooking for high-profile individuals has shaped his approach, translating those learnings into dishes that connect with a wider audience.

The bar programme is headed by Pradyumna Shanker, where each cocktail is designed to tell a story or evoke a memory, aligning with the restaurant’s overall philosophy.

Designed by architects Fellow Yellow, the 65-seater restaurant features a vibrant lower level that creates a lively and social dining atmosphere. Sustainability plays a key role in the design approach. Despite spanning just 2,700 sq. ft., the space is designed across multiple levels to create a sense of discovery and openness.

Key design highlights include a striking 15-foot nimbu-mirchi installation and a hyper-real 3D artwork inspired by classical Indian art. One standout piece shows a woman playing what appears to be a sitar, but on closer look, it is actually a life-sized guitar—symbolising the blend of Indian and global influences.

The venture is led by entrepreneur Niharika, who began her journey at 19 with Eat Confetti, a dessert QSR brand that expanded to multiple cities before the pandemic. She has since launched concepts like Coffee Shop Comic Social, Betsubara, and Lyzure—an experiential art studio with a food and beverage element, now expanding further.

Niharika Gollapalli, Co-founder at TheySee, “Every brand I've built has been about creating a space where people feel genuinely seen. I've spent years watching how people respond to spaces and experiences and I always like building brands that pay attention. We're not reinventing Indian food. We're just finally being honest about it and the most interesting thing happening in the cuisine right now isn't in fine dining but how a generation is casually changing it by eating on its own terms. That's the brand I wanted to build with Chef Suryansh.”
