
In Chandigarh’s active café circuit, The Sip Society introduces a format that blends daytime café operations with a controlled, once-a-week speakeasy experience. The 1,600-square-foot outlet in Sector 10 is built around a model that allows guests to use the space for long stays during the day, with the ambience shifting gradually into its evening identity.
During operating hours, the café reflects inspirations drawn from English tea rooms across London, Edinburgh and Toronto. The space incorporates velvet seating, wooden furniture and handwritten menus, supported by a food and beverage program that centres on artisanal coffee, baked items and simple, familiar offerings. The interior design references Victorian elements and the structured look associated with Dark Academia, with reading corners, subdued lighting and compact details intended to create a contained and functional environment for guests who want to spend extended periods of time.
As the day progresses, the venue transitions into a quieter, low-light format that supports its weekly speakeasy operations. The shift is accompanied by a focused cocktail menu and global small plates. The format is positioned to encourage guests to stay through the transition from day service to evening service, allowing the venue to operate with dual utility across the week.
Gurrattan Gill, Business Director, says, “The Sip Society is a pause button in the city’s rhythm. We imagined a place where mornings stretch lazily, afternoons drift by, and evenings invite laughter over cocktails where every moment feels unhurried and every visit feels like coming home.”
Akarshan Brar Gill, Creative Director, adds, “Our goal was to design a space that tells a story as the day unfolds. From sunlit corners to the intimate glow of the speakeasy, which comes alive on off-week hours, every detail from light and sound to service was orchestrated so guests move seamlessly from one mood to the next, losing track of time in the best way.”
The project has been executed with The Bar Consultants, a New Delhi–based hospitality firm led by co-founders Angad Chachra and Nitya Sareen. Their portfolio includes Bobachee in Delhi, Masala Synergy in Gurgaon, Sol Brew House in Shimla and the India rollout of Jamie Oliver Restaurants. Their work focuses on designing venues with operational clarity and guest-flow efficiency. For The Sip Society, they provided input across concept development, feasibility, food and beverage planning, spatial design, training and pre-opening procedures.
“We shaped the food and beverage menu as an extension of the space’s rhythm. Morning teas and artisanal coffees offer a gentle welcome, afternoons open up to flavours and textures, and evenings unfold into playful cocktails that linger on the palate and in memory. That flow meets its peak on Off-duty nights, when the speakeasy identity takes over. Our aim was to create a narrative where every sip and bite moves with the day, making the culinary experience inseparable from the ambience,” say Angad Chachra and Nitya Sareen, Co-Founders, The Bar Consultants.
The Sip Society is positioned as a flexible all-day destination for a wide demographic—professionals, families, travellers and weekend visitors. Its operational model is designed to encourage repeat use throughout the week and during weekend transitions, reflecting a broader shift in hospitality where venues seek to maximise utility through multi-format concepts.
