Restaurant India News: Studio Frantzén Reopens as Brasserie Frantzén in Dubai With New Brasserie Format

Studio Frantzén has reopened for the new year under a new identity as Brasserie Frantzén, marking a format shift within the Frantzén Group’s global brasserie portfolio. The Dubai outlet, which is the first location by Björn Frantzén in the city, has relaunched with a revised menu aligned to the group’s brasserie-led dining model. The move reflects a repositioning of the venue to a more accessible dining format while retaining the brand’s culinary direction.

Björn Frantzén has stated that his approach to food is grounded in delivering high-quality dishes in settings designed for regular dining occasions rather than formal fine-dining environments. The transition to Brasserie Frantzén follows this positioning and introduces a refreshed menu based on brasserie formats. The updated offering includes starters such as lobster roll with brioche and spicy mayonnaise, yellow beetroot with mushrooms, walnuts and beurre blanc, and beef carpaccio with foie gras, orange, roasted pumpkin seeds and ponzu sauce.

Main course options at the relaunched venue include veal schnitzel with veal jus, whipped umami browned butter and grilled lemon, a recipe previously developed at Björn Frantzén’s gastropub, The Flying Elk. Other core dishes on the menu include mussels à la crème with creamy sauce, grilled onion, parsley and jalapeño mayonnaise, wagyu beef burger with crispy onions, pickled shiitake, Japanese mustard emulsion and cheddar cheese, and wood-fired grilled celeriac with truffle and cabbage jus. The steak with pepper sauce continues to feature on the menu, reflecting the steak frites dish that influenced Björn Frantzén’s early career.

The venue also continues to operate a dessert and confectionery section referred to as the candy room, where guests can select desserts at the end of the meal. The wine programme includes more than 1,300 labels, covering producers from 15 countries, including international labels and select first-time entries in the Dubai market. Beverage operations are supported by a 40-seat bar offering Nordic-inspired cocktails and spirits developed using ingredients such as rhubarb, sea buckthorn and blueberries.

The relaunch also retains the venue’s entertainment format, with a resident DJ playing daily. Music programming covers multiple genres, including classic rock and alternative tracks. The overall operating model positions Brasserie Frantzén as a social dining format within the Frantzén Group’s international brasserie network.
