Sterling Holiday Resorts has launched Udaipur Katha, a rooftop dining concept at Sterling Jaisinghgarh in Udaipur, responding to growing demand for experience-focused dining formats in India’s leisure and heritage destinations. The new restaurant combines regional cuisine with live-fire cooking and open-sky seating, positioning dinner service as a longer, immersive engagement rather than a quick dining occasion.

Located across two elevated terraces with views of the Aravalli ranges, Udaipur Katha has been designed for extended evening operations. The layout includes cabana-style seating influenced by traditional jharokha architecture, live barbecue stations, and background music programming. According to the company, the concept encourages guests to remain at the table longer, interact with the cooking process, and explore food narratives rooted in regional culture.

Dileep Nair, Senior Vice President, Customer Experience, Sterling Holiday Resorts, said, “Today’s diner is seeking depth, an experience that connects them to place, people, and culture. Udaipur Katha was conceived as a space where guests can unwind at sunset, savour fire-led cooking inspired by Mewar, and let the evening linger. It is designed to be experienced, not rushed.”

Udaipur Katha marks Sterling’s seventh destination-led restaurant format. The company has been steadily expanding its food and beverage portfolio by introducing regional and hyperlocal dining concepts across its resort properties. Earlier launches include The Malabar at Sterling Wayanad, Pahaare at Sterling Darjeeling, Airavat at Sterling Aravalli Udaipur, and other property-specific restaurants such as Amo Odisha at Sterling Puri and Slate and Pearl at Sterling Kodai Lake. Sterling stated that these concepts have been shaped by long-stay guest behaviour and increasing consumer interest in regional cuisines.

The menu at Udaipur Katha centres on live-fire cooking, featuring both non-vegetarian and vegetarian dishes. Offerings include slow-grilled Laal Maas, saffron kebabs, charcoal-fired game meats, Jackfruit Shashlik, Smoked Kaddu Steaks, and Churma-Stuffed Sweet Potatoes. The preparations draw from Rajasthani culinary traditions and desert farming practices, using native spices and established cooking methods. Dishes are paired with condiments and beverage recommendations, including spirits and non-alcoholic options inspired by local ingredients.

Desserts continue the regional focus while applying contemporary presentation techniques. Items such as Ghewar Cheesecake and Baked Churma Tart reinterpret traditional Rajasthani sweets in plated restaurant formats.

The launch aligns with wider dining trends in tourism-driven markets, where rooftop and open-air restaurants are gaining traction. Consumers are increasingly favouring slower dining experiences, curated menus, and venues that reflect local culture and geography. Hospitality operators have responded by using food-led concepts to differentiate properties beyond accommodation offerings.

For Sterling Holiday Resorts, Udaipur Katha supports its broader strategy of building destination dining as a revenue and engagement driver within its resort portfolio. The company noted that such formats not only add incremental revenue streams but also contribute to improved guest interaction and longer stays.
