Radisson MG Road, Delhi has expanded its food and beverage portfolio with the launch of LORE – Recipes Retold for Today, a new world cuisine restaurant positioned around experience-led, all-day dining. The restaurant has been introduced as part of the hotel’s broader strategy to cater to evolving consumer preferences that prioritise engagement, cultural relevance, and menu-led storytelling.

LORE is built around the idea that cuisine reflects collective memory, tradition, and regional identity. Its culinary direction draws from historical recipes, global food traditions, and regional influences, with dishes adapted for contemporary dining habits. The concept focuses on presenting food as a medium that connects cultures and generations, aligning with a growing hospitality trend toward narrative-driven dining formats.

The menu is structured as a progression of themed chapters, including Indian Short Stories, Scrolls from the Silk Road, and The Final Chapter. Each section represents influences from India, Asia, Europe, and other global regions, allowing guests to navigate different culinary traditions within a single dining experience. The format blends familiar flavours with exploratory elements while maintaining operational flexibility for all-day service.

The culinary programme is curated by Executive Chef Kush Koli, who has developed the menu through an exploration of global flavours, techniques, and regional cuisines. His approach combines traditional foundations with contemporary execution, ensuring relevance for modern diners while retaining authenticity. Signature dishes include Lamb Chole Bhature, Pondu Crab, The Dory Roast, Butter Chicken Balls, and Beurre Blanc Salmon, reflecting this balance between classic references and updated presentation.

The beverage offering extends the concept into the bar and café formats. Signature cocktails such as Living Heat, Myco Milano, and Mercado Sunrise Paloma are positioned around balanced flavour profiles, while mocktails including Caffy Things, Red Wall, and Kin Hya A Fresh & Spicy Delight address non-alcoholic preferences. The café programme features PRONTO and GRAVITY, single-estate 100 percent Arabica coffees sourced from Coorg, with flavour notes of gooseberry, grape peel, milk chocolate, and hazelnut, curated by Beverage Union.
