Restaurant India News: Nines by Hotel Evren Launches in Goa with Dining and Nightlife Focus

Nines by Hotel Evren has opened in Vagator, Goa, as part of Anant Hospitality’s expanding hospitality portfolio. Positioned within the property as its primary food and beverage venue, the concept combines dining, beverage programming and entertainment under a single format, reflecting the growing convergence of hospitality, lifestyle and nightlife experiences.

During daytime operations, Nines functions as an all-day dining destination featuring a menu curated by Chef Prachi Mehta. The offering includes dishes such as Balchão Charred Broccoli with coconut feni cashew cream, Kismur Grilled King Prawns, Chettinad Fried Chicken with Goan Poee, Sichuan Pepper Soft Shell Crab, Blue Cheese Cappelletti with walnut sauce, and Bread-Crusted Salmon in Moilee sauce.

The dessert menu features items including Sushi Tiramisu and Picante, a preparation made with jalapeño chocolate mousse and nitro chilli. The beverage programme includes signature cocktails such as Ampana, Imli Drop, Cheeky Mosambi, IX Lives and Nines Espresso.

Chef Prachi Mehta said, "Food should be an adventure, but it should always feel like coming home. With this menu, we’ve taken world-class, rigorous techniques and used them to celebrate the comforting, nostalgic flavours we all love."

As the day progresses, the venue transitions into a nightlife-focused format featuring curated music programming, live performances, enhanced sound systems and immersive lighting. The model reflects a broader hospitality trend where food and beverage destinations increasingly generate revenue through a mix of dining, entertainment and late-night experiences.

The Goa venture marks the expansion of the Nines brand beyond Mumbai, where it has established a presence in the premium hospitality segment. Led by Suved Lohia under Anant Hospitality, the brand is focused on creating integrated dining and entertainment experiences that cater to evolving consumer preferences in key leisure markets.

The launch highlights the continued growth of experience-led hospitality concepts in Goa, where operators are increasingly combining culinary offerings with music, nightlife and event-driven programming to attract both local consumers and tourists.
