
Malai Marke USA has appointed Chef Himanshu Joshi as Sous Chef, adding senior-level kitchen expertise to its leadership team as the brand sharpens its positioning in the competitive Indian dining segment in the United States.
Chef Joshi joins with cross-market experience spanning premium Indian restaurants in both India and the United States. He is currently associated with The Leela Ambience, New Delhi at Dilli 32 Restaurant, where he serves as Sous Chef. In this role, he has been involved in delivering structured North Indian menus rooted in traditional recipes and classical techniques, aligned with luxury hospitality standards.
Earlier, he worked with Chef Manish Mehrotra at Indian Accent in New York and New Delhi as Chef de Partie. His tenure there exposed him to progressive Indian cuisine, structured innovation processes, and global fine-dining operations. He also held the position of Junior Sous Chef at Riga Foods under Chef Ritu Dalmia, gaining experience across refined Indian and modern European formats.
His career portfolio includes The Lalit, New Delhi (Baluchi Restaurant), India Habitat Centre, Lodhi Road, Pan India Food Solutions Pvt. Ltd., and Nirula’s Hotels. These roles strengthened his exposure to luxury dining, institutional catering, and large-scale food production environments.
Chef Joshi has received a Merit Certificate Award at the AAHAR Competition (Pragati Maidan, 2015). He also earned a Mistry Audit Certification with a 99 percent score, underlining his focus on hygiene compliance and operational benchmarks.
