Vegetarian offerings include the Vegetable Skewers Course, which features five varieties of seasonal vegetables grilled over charcoal. The preparation focuses on retaining natural flavours while reducing heaviness through limited oil usage. The dish is paired with the restaurant’s Bagna Cauda, adapted to suit Japanese flavour profiles while maintaining a vegetable-forward format.

For non-vegetarian diners, the restaurant continues to centre its menu around charcoal-grilled yakitori. These skewers are prepared by certified yakitori chefs trained in traditional techniques. Cooking over charcoal allows excess fat to render out, resulting in leaner preparations finished with salt or soy-based tare. The sushi menu remains a core offering, combining either seafood or vegetables with lightly seasoned rice, aimed at diners seeking balanced meals.

Kuuraku Nexus Shantiniketan has also added house-made goma-dofu, or sesame tofu, to its menu. Prepared in-house, the dish is positioned as a lighter option suited to health-conscious guests.
