Restaurant India News: Karma Modern Indian Expands to India and Middle East After Florida Debut

Karma Modern Indian, the award-winning restaurant from Washington, D.C., and recipient of the Michelin Bib Gourmand, is preparing for a strategic expansion into the Middle East and India. Known for bringing a modern interpretation to Indian cuisine, the brand continues to grow globally following the opening of Ayre by Karma at the Amrit Ocean Resort on Singer Island, Florida.

“Ayre by Karma is a natural evolution of our philosophy, where wellness meets flavour and tradition meets innovation,” said Sachin Mahajan, Founder and Principal, Circle of Life Hospitality and Karma Modern Indian. “With Amrit Ocean Resort, we’ve found a partner that shares our belief in balance and harmony — together, we’re creating an experience that nourishes both body and spirit.”

Mahajan, along with Puneet Ahluwalia, a well-known name in political circles, is leading the brand’s international expansion. At the culinary forefront of this journey is Chef Ajay Kumar, Corporate Chef at Circle of Life Hospitality, who has been instrumental in redefining Indian dining in the U.S. through inventive use of spices and modern cooking methods while maintaining authenticity.

“Our goal has always been to honour India’s culinary legacy while presenting it in a form that excites a new generation of diners,” said Chef Kumar. “With our journey from Washington to Florida, we’re celebrating the evolution of Indian cuisine — taking it from the heart of D.C. to the world.”

Located within the Amrit Ocean Resort, Ayre by Karma delivers an upscale dining experience that blends Indian tradition with global presentation. The restaurant features curated Chef’s Tasting Menus in three-, five-, and seven-course formats priced at $75, $105, and $145, respectively. Optional wine pairings complement each menu for a complete culinary experience. An à la carte menu includes dishes such as Lobster Masala, Fennel Paneer, Amritsari Snapper, and a rotating selection of signature curries.

“Our vision is rooted in harmony — between culture and cuisine, tradition and innovation,” said Neera Barot, Co-Founder, Amrit Ocean Resort. “Karma Modern Indian shares this ethos, and together we are creating more than a restaurant — we’re crafting a journey for the senses.”

With its open kitchen and oceanfront setting, Ayre by Karma represents more than just a new location. It symbolizes a shift in how Indian cuisine is positioned globally — refined, experiential, and rooted in authenticity. The setting at Palm Beach’s Amrit Ocean Resort reflects a new chapter for Indian fine dining in America, combining modern design with the flavors of India.

Karma Modern Indian has played a vital role in changing the global perception of Indian cuisine. From its success in Washington, D.C., to its latest venture in Florida, the brand continues to bridge tradition and innovation, marking its next milestone as it prepares to enter the Middle Eastern and Indian markets.
