Her professional journey includes directing beverage operations for Bastian Hospitality’s leading venues across India, overseeing consulting projects nationwide, and contributing to the beverage program at New York’s Michelin-starred Le Bernardin. Across these roles, she has demonstrated a strong ability to develop innovative bar and restaurant concepts that balance operational precision with creative storytelling, resulting in elevated guest experiences.
In her new role at JW Marriott Mumbai Sahar, Sayles will oversee the hotel’s comprehensive Food & Beverage operations, encompassing strategy, innovation, and guest engagement across its restaurants, banquet facilities, and lounges.
