Restaurant India News: Idylll Bengaluru Launches New Cocktail Menu Based on India’s GI Ingredients

Bengaluru’s modern Indian restaurant Idylll has introduced its newest cocktail programme titled “The GI Journey: A Cocktail Book,” built around ingredients linked to India’s Geographical Indication registrations. Designed to align with Idylll’s focus on narrative-driven dining, the menu applies regional Indian produce to create drinks that reference local identity and origin.

The concept is structured around two characters travelling across the country, moving through varied terrains such as valleys, coastlines, and agricultural belts. Each cocktail functions as a chapter in this route, referencing communities, landscapes, and the craftsmanship behind India’s food and beverage heritage.

Notable drinks include South of Sleep, a combination of vodka, mango, and Coorg coffee brew intended to reflect the setting of Karnataka’s rainy hills. Misty Letters from Darjeeling uses gin, apricot, orange, and Darjeeling tea, aligning with the aroma of the Himalayan region. Pashmina Potion features a saffron-led whiskey profile referencing Kashmir. The Mango Republic highlights Maharashtra’s Devgad Hapus mango with tequila and lemongrass, while Vitamin See uses Nagpur orange with passionfruit and thyme.

According to the restaurant, this menu follows months of research and product testing. The approach combines traditional ingredients with current bar techniques, using cordials, regional infusions, and in-house bitters. The intent is to present a structured drinking experience shaped by Indian culinary geography.

“The GI Journey” isn’t described as a standard menu but as a collection of stories connected to local regions, using flavour and technique to allow guests to explore different parts of the country within a single setting.
