Restaurant India News: CHICA Unveils Major 2025 Redesign and Menu Overhaul in New Delhi

CHICA in New Delhi has announced a full-scale redesign of its interiors, menu, and cocktail offerings under a new chapter titled The Renaissance. Four years after entering Delhi’s dining market, the restaurant has introduced a refreshed direction developed by founders Dinesh Arora and Pooja Arora. The update focuses on a more grounded and contemporary environment shaped by natural elements, global references, and the customer base that has grown since the restaurant opened.

“CHICA has always been about emotion—energy, warmth, and the people who walk through its doors,” says Dinesh Arora, looking back at the period since 2022. “With The Renaissance, we wanted to create something more rooted and soulful. The design, the food, the cocktails—every element has evolved to feel deeper, more global, and more connected to what modern dining truly is.”

The redesign incorporates Pantone’s 2025 Color of the Year, Mocha Mousse, forming the base of the restaurant’s Brown + Green palette. The interiors now feature textured walls, wood finishes, stone details, and low lighting, while the Fountain Court’s outdoor area has been updated with added greenery and structured walkways.

“For us, nature was the starting point,” says Pooja Arora. “We wanted guests to feel a sense of calm the moment they step in—through colours, textures, and flavours that bring you closer to the earth. This Renaissance is really about creating a space that feels familiar yet renewed, where every detail invites you to slow down, discover, and enjoy.”

CHICA’s menu has also been reconceived with an ingredient-first approach. The selection includes small plates such as Corn Ceviche, Edamame Hummus, Scarlet’s Chicken, and Burrata Fritta. Larger dishes include Tandoori Salmon, Gochujang Lime Prawns, Confit Mutton Ribs, and Tamarind Pepper Smoked Pork Belly. The lineup of pastas, pizzas, and sushi—featuring items such as Pumpkin Cream Cheese Ravioli, Rigatoni A’la Vodka, Truffle Shroom Pizza, Chica Golden Maki, Samurai Tuna, and Sushi Omakase—expands the restaurant’s global positioning.

The cocktail program has been restructured around a narrative format, with drinks based on destinations and personal memories. Developed with clarified spirits, botanicals, tea infusions, in-house liqueurs, and seasonal fruits, the beverages are designed to be straightforward in style. “These cocktails are a tribute to the journeys that shaped CHICA, and to the guests who became part of our story,” says Dinesh.

The combined updates present a unified direction for CHICA, reflecting how diners in Delhi are looking for spaces that feel current, comfortable, and globally influenced. The restaurant has reopened with The Renaissance as its core identity, offering a setting that is familiar but updated, and focused on detailed execution in both design and dining.
