
HOM, a new 42-seater restaurant in Bandra by first-time restaurateur Pratik Gaba, is a bold ode to fire-crafted cooking. Named after the sacred Sanskrit ritual homa, it celebrates fire as both element and experience powering a menu that’s fresh, fearless, and full of personality.
Set within a 2,000 sq. ft. space, HOM’s open kitchen dubbed the HOM Theatre anchors the restaurant with a traditional tandoor and custom wood-fired grill, giving guests a front-row view of the flames. Designed by Studio 6158’s Parzan Daruwalla and Natasha Chawla, the interiors channel the primal energy of fire through terracotta walls, red tiles, and bold textures, balancing luxury with warmth.
At the helm of the kitchen is Chef Saurabh Udinia, whose menu transforms familiar ingredients into inventive plates like Charred Broccoli with Green Chilli Cashew Sauce, Snapper Crudo in Tamarind Buttermilk, Goan Sambal Toast, and Boti Roganjosh Fennel Tarts. Signature kulchas get playful upgrades—Goat & Dill with Cheddar and Kerala Mud Crab Parmesan while larger plates like Lal Maas Mutton with Stock Khichdi and Bombay Chilli Cheese Lobster steal the show. The restaurant’s exclusive eight-seat omakase-style counter offers diners an intimate, fire-front experience equal parts theatre and tasting.
Complementing the food is a cocktail program by Countertop, led by Pankaj Balachandran, featuring tropical and smoky concoctions like Cuban Missile Swizzle, Mango Bell, Ashes to Oolong, and Beets by Café. With its fiery soul, inventive menu, and electric energy, HOM isn’t just a restaurant, it’s a sensory experience that redefines progressive Indian dining in Mumbai.
