AER at Four Seasons Hotel Mumbai is set to host Viva La Vida — a nine-day celebration of Mexican cuisine and culture, running from 25th October to 2nd November 2025. The event will transform the city’s iconic rooftop bar into a lively Mexican-inspired space, combining bold flavours, agave-led cocktails, and Latin beats with AER’s signature high-energy atmosphere.

At the core of Viva La Vida is Chef Jason Hudanish, a Miami-born culinary consultant with more than two decades of international experience. Renowned for his ingredient-focused and expressive approach, Chef Jason has previously conceptualised restaurant menus and pop-up experiences across the U.S. and India. His interpretation of modern Mexican cuisine for AER pays tribute to traditional roots while adding contemporary refinement. Each dish has been curated to reflect the colours, spices, and communal spirit of Mexico’s food culture.

Complementing the food is AER’s agave-forward cocktail selection, curated by its in-house mixology team. The menu features a lineup of premium tequilas and mezcals, including Clase Azul and Don Julio 1942, alongside inventive house cocktails such as the AER Picante, now presented with a Mexican influence. This combination of culinary and beverage offerings aims to create a complete sensory journey through Mexico’s regional tastes and traditions.
