Restaurant India News: Fatboy Izakaya Bangkok Collaborates with Torii Mumbai for Limited-Time Takeover

Mumbai-based contemporary Asian restaurant Torii is starting the year with an international kitchen and bar collaboration that reflects the growing demand for global culinary partnerships in India’s premium dining segment. On 29th and 31st January, Bangkok’s Fatboy Izakaya will take over the Torii kitchen and bar for two evenings, introducing its modern izakaya approach to the Mumbai market.

The collaboration brings Chef Andrew Martin, founder and culinary lead at Fatboy Izakaya Bangkok, to India. With nearly ten years of professional experience across Asian kitchens, Chef Andrew is known for reworking Japanese izakaya concepts through global techniques and personal interpretation. His focus remains on flavour execution and experiential dining rather than traditional formats, aligning with current shifts in contemporary Asian dining.

Abhayraj Kohli, Co-founder, Torii, said, “We’re not just hosting a takeover, we’re creating a shared bar experience. Collaborating with the team from Fatboy Izakaya allows us to explore new flavour directions while staying true to Torii’s identity.”

The takeover extends beyond the kitchen into the beverage programme. Torii’s bar team will work alongside Fatboy Izakaya’s Head Bartenders, Stefan Usaphrom and Joe Thamrongrit, to present six collaborative cocktails. The drinks menu combines Japanese-inspired flavours with Indian ingredients and techniques. Key cocktails include the Sumo Sour, made with whisky, yuzu, salted plum, katsuobushi and wasabi, and the Hot Mess, featuring tequila, mezcal, mango and Thai chamoy.

The food menu focuses on Fatboy Izakaya Bangkok’s modern izakaya-style offerings adapted to Torii’s contemporary Asian positioning. Dishes include Ume and Chicken Fried Rice with Yuzu kosho–grilled chicken thigh, BKK Spider Roll with soft-shell crab, fish and chips karaage, and vegetarian options such as Ramen Cacio e Pepe, Portobello Japanese-style sando, and Dynamite Handrolls. The cocktail list also includes options like PB and J Negroni and Umeshu Spritz, reinforcing the bar-led nature of the collaboration.

From a hospitality industry perspective, the takeover reflects a strategic alignment between two brands with distinct identities. Fatboy Izakaya’s high-heat cooking methods, strong seasoning profiles and informal menu structure are integrated into Torii’s more refined Asian dining framework without altering either brand’s core positioning.

Spanning two nights, the collaboration positions itself as a limited-edition dining experience that highlights cross-market culinary exchange between Bangkok and Mumbai. For Torii, the partnership supports its focus on international collaborations as a growth lever, while for Fatboy Izakaya Bangkok, it offers brand exposure in one of India’s most competitive premium dining markets.
