Aspect Hospitality, the hospitality vertical of Aspect Global, has opened FITOUR in Bandra West, Mumbai, with a 14-seat dining format focused on Indian cuisine, tasting menus and sensory-led dining.
Opened on 4th October 2026, FITOUR presents its menu through a sequence of courses built around Indian ingredients, memories, places and culinary traditions. The concept combines food with sound, lighting, fragrance and design, while contemporary techniques are used to reinterpret familiar flavours and ingredients.
The dining format also includes wine, cocktail and mixed pairings designed to accompany the courses. The experience is structured around individual chapters, with changes in soundscape, lighting, fragrance and textures forming part of the progression between courses.
The interiors have been designed as an extension of the dining format, using handmade terracotta tiles, natural woven fibres, muted landscapes and textured surfaces. A Nostalgia Wall features photographs, handwritten recipes, childhood memories and custom abstract artworks. Jars of pickles and ferments, along with hand-blended spices, are also displayed across the space.
Hitesh Keswani, Managing Director & CEO, Aspect Hospitality, says, “FITOUR represents our vision of creating hospitality experiences that go beyond the conventional dining format. The concept brings together food, storytelling, design and sensory elements to create a distinctive and intimate experience for guests. Chef Ashwin’s culinary perspective has been central to shaping FITOUR, and we are pleased to introduce a concept that reflects both his journey and Aspect Hospitality’s approach to creating experiences with a strong point of view.”
“FITOUR is a reflection of my journey with Indian cuisine and the experiences that have shaped my approach to food. The menu draws from memories, places, ingredients and techniques that have stayed with me over the years, while presenting them through a contemporary lens. I wanted to create an experience that extends beyond the food itself, with every element—from the flavours and pairings to the sound, lighting and design—contributing to the overall narrative”- Chef Ashwin Singh, Chef at FITOUR
FITOUR operates with one seating and 14 seats per service. The tasting menu is priced at Rs 8,245 plus taxes. Cocktail pairing is available for an additional Rs 5,495, International Wine Pairing for an additional Rs 6,495, and Indian Wine Pairing for an additional Rs 5,145, all plus taxes.
The Bandra West opening marks Aspect Hospitality’s entry into a more intimate dining format, combining a limited seating capacity with a tasting menu and integrated food-and-design experience.
