Chef Paul Noronha is Executive Chef at ITC Maratha. With an impressive career spanning over
25 years, Chef Paul, a Mumbai native, brings extensive expertise and creativity.
Chef Paul's culinary journey began during his diploma at the Institute of Hotel Management
and Catering Technology in Mumbai, where he developed his skills and passion for the
culinary arts. His dedication and talent were further cultivated during his time at ITC
hotels, where he received rigorous training at the WelcomGroup Management Institute in
Gurgaon.
As ITC Hotels expanded, Chef Paul gained valuable experience working in kitchens from Delhi
to Chennai. He catered to the discerning palates of dignitaries and heads of state,
including a former President of the United States. His culinary prowess was recognized with
the 'Smart Chef of the Year' award during his tenure at Sheraton Chola Chennai.
Returning to Mumbai, Chef Paul took on the role of Executive Chef at ITC Grand Central,
where his innovative culinary creations and leadership earned him the prestigious Executive
Chef of the Year award for two consecutive years.
Now at ITC Maratha, Chef Paul is set to redefine luxury dining in Mumbai. This role holds a
special significance for him, as it evokes a sense of 'Homecoming' nostalgia. He was part of
the pre-opening team for the Peshwa Pavilion restaurant back in 2001 at ITC Maratha.
