At a time when India’s dining landscape is dominated by legacy names and quick-service giants, Ayush Sahani stands out as a young entrepreneur redefining what modern Indian hospitality can look like. As the Founder of Ministry of Naan, he is building a brand that pays homage to North Indian culinary traditions while aligning with the aesthetics, efficiency, and aspirations of today’s consumer. Ayush’s entrepreneurial journey began early, during his college years, when his father’s investment in restaurants at Mumbai’s Kamala Mills sparked an enduring fascination for the business of hospitality. Immersed in day-to-day operations, he observed how details, service, design, and guest emotion, shaped a restaurant’s identity. When those ventures shuttered during the pandemic, the experience, though challenging, became a turning point. It taught him the importance of adaptability, grounded leadership, and building systems that endure beyond circumstance. His next chapter, with the creation of Saltt in Karjat alongside the Ahuja family, marked a defining phase in his evolution. The project helped Ayush understand the power of experiential dining and the delicate balance between concept and execution, lessons that would later shape his own ventures. With the Ministry of Naan, Ayush set out to bridge nostalgia with novelty. He saw an opportunity to make Indian comfort food both scalable and aspirational, appealing to traditionalists and new-age diners alike. His approach marries authenticity with innovation, focusing on operational rigour, design detail, and a digital-first brand ethos.
