Romeo Lane Dubai has appointed Chef Aakash Tyagi as its new Executive Chef, strengthening its culinary leadership as the restaurant continues to expand its presence in the UAE's premium dining market.
Chef Aakash brings over a decade of experience in Modern Indian cuisine, with expertise in menu development, restaurant pre-openings, culinary operations, concept creation and team management across India and the UAE.
Before joining Romeo Lane Dubai, he served as Executive Chef at Pincode by Chef Kunal Kapur across India and the UAE, where he led culinary operations for five locations and played a key role in developing the brand's menu focused on regional Indian cuisine with a contemporary approach. During his tenure, the restaurant received recognition from the Michelin Guide in 2025.
His previous experience also includes leading the pre-opening of Suzy Q in Bengaluru, a 250-cover restaurant and bar, where he developed a menu inspired by Karnataka's coastal cuisine and seasonal ingredients. Earlier, he worked as Sous Chef at Raahi, Bengaluru, contributing to a regional Indian dining concept that incorporated modern culinary techniques such as fermentation and kombucha.
Chef Aakash has also held culinary positions with Namak at Dusit Thani Abu Dhabi, Masala Library by Jiggs Kalra, and Taj Lands End, Mumbai, building expertise in contemporary Indian cuisine rooted in classical techniques.
At Romeo Lane Dubai, he will oversee culinary operations, menu development, kitchen management and team training. The new menu introduces a Modern Indian and Japanese offering featuring a combination of Robata grilling and traditional Tandoor cooking techniques alongside seasonal ingredients.
