
Watson’s Cantina opened in Vasanth Nagar, becoming the newest addition to Shilton Hospitality’s neighbourhood-led spaces in Bengaluru. The space seamlessly blends bold, flavour-forward plates, thoughtfully crafted cocktails, and a music-led energy within an environment that feels instantly warm and familiar.
A standout feature is the dedicated studio for chef residencies and pop-ups, adding depth to the experience while shaping Watson’s Cantina into a true neighbourhood destination one where creativity, community, and the brand’s signature warmth naturally come together.
Curated Latin American artwork, artisanal lighting, and carefully selected décor infuse authenticity and narrative into every corner. The bar stands out with vibrant tiles and brass accents inspired by the markets and cantinas of Central and South America. The overall ambience strikes a perfect balance between lively energy and relaxed comfort, making each visit feel like a journey through Latin culture.
Upstairs, the studio space Del Sabor is envisioned as an intimate hub for creativity and experimentation. Designed to host chef collaborations, rotating menus, themed dinners, and culinary showcases, it prioritizes innovation and exploration over conventional dining.
The menu at Watson’s Cantina celebrates the diversity and vibrancy of Latin cuisine with dishes that are bold, bright, and ideal for sharing. Highlights include Guacamole con Totopos with creamy avocado and crisp house-fried tortillas; Charred Corn Esquites tossed with lime, chilli, and queso; Taquitos de Chorizo filled with spiced chorizo; Yucatán Prawn Toast on golden brioche with citrus-marinated prawns; Baja-style Fish Tacos with light, crunchy fish, crema, and slaw; and Carne Assado, featuring tender grilled meat finished with smoky seasoning.
"At the Cantina, our goal is simple. We want every dish to tell a story through freshness, texture and honest flavour. The Guacamole con Totopos, Corn Esquites and Taquitos de Chorizo celebrate the pleasure of simple ingredients done right. Even our Carne Assado is slow-cooked for hours, so the flavour unfolds with every bite. This is food made with intention and made to be shared,” adds Chef Anthony Rohan Parish.
The cocktail programme mirrors this spirit with inventive pours such as Dorado Dulce, offering a silky balance of herbal brightness and agave sweetness; Tapache Tango, inspired by fermentation traditions with sweet-tart vibrancy; and Rojo Rebelde, delivering bold bitterness with a smoky, romantic edge.
