Restaurant India News: Trèsind Mumbai Debuts 10-Course Chef’s Table Focused on Regional Indian Cuisine

Trèsind Mumbai has introduced a new experiential dining format titled Chef’s Table: Exploring India, a 10-course tasting menu designed to highlight regional Indian cuisines through a structured culinary narrative. The format will debut on 12th March in the restaurant’s Private Dining Room, marking a shift toward research-led tasting experiences within the restaurant’s fine dining program.

The initiative is structured as a limited-seating format scheduled across selected lunches and dinners each month. Under this concept, the restaurant will focus on a specific regional cuisine for each edition, presenting dishes that reinterpret traditional recipes alongside new creations developed using regional ingredients, techniques, and cultural references.

The Chef’s Table format also introduces a collaborative component called Chef’s Dialogue Night, which features a four-hands dining experience. In this format, the resident chef and a guest chef work together to present a collaborative 10-course menu, combining their individual culinary approaches in a single service.

The first edition of the series will focus on Malvani cuisine and will feature guest chef Surekha Walke, owner of Chaitanya. The following edition will explore Sindhi cuisine and will be curated by Vicky Ratnani.

Future editions of the program are expected to cover a wide range of Indian regional cuisines, including dishes inspired by Himalayan culinary traditions, coastal seafood-focused cooking styles, and the lesser-explored flavours of India’s northeastern states. The series will also examine culinary traditions associated with regions such as Awadh, Chettinad, Rajasthan, Kashmir, and southern India.

The concept is led by Himanshu Saini, Corporate Chef of the Trèsind brand and the chef behind Trèsind Studio. The Mumbai restaurant operations are managed by Sarfaraz Ahmed, Executive Chef at Trèsind Mumbai.

Ahmed said, “With Chef’s Table: Exploring India, we are building a living laboratory of ideas. This format gives us the freedom to experiment fearlessly to deconstruct memory, reinterpret tradition, and reassemble flavours in ways that feel both nostalgic and entirely new. The four-hands dialogue brings an added unpredictability; when two culinary minds come together, the outcome is layered, spontaneous and deeply experiential. We are excited for our guests to not just taste a region, but to feel immersed in it — and we believe that sense of discovery will stay with them long after the meal.”

Saini added, “Indian cuisine is one of the most emotionally rich and technically diverse cuisines in the world. With Chef’s Dialogue Night, we are creating a platform where ideas can collide and evolve — two chefs, four hands, one unfolding narrative. It allows us to question, reinterpret and elevate regional India in ways that are progressive yet rooted. There is an element of anticipation in this format — for us as chefs and for our guests — because every edition will be different, and that creative tension is what makes it powerful. We are confident that diners will experience something truly transformative.”

Industry observers note that experiential tasting menus and chef collaboration formats are increasingly being adopted by fine dining restaurants as a way to differentiate their offerings and attract repeat diners. By focusing on regional storytelling and collaborative chef-driven menus, Trèsind Mumbai is aligning with a broader trend in the hospitality sector that emphasises curated dining experiences and limited-edition culinary programs.
