
TAT, the restaurant from Sumit Govind Sharma’s Monarch Liberty Hospitality, is preparing to showcase regional Indian cuisine through a focused food festival dedicated to Rajasthan. The restaurant, known for presenting dishes that represent different parts of the country, will host The Royal Kitchens of Rajasthan from 15th to 23rd November 2025 during lunch and dinner service. The event aims to present diners with a structured, region-specific experience.
For this festival, TAT is bringing in Maharaj Lalaram, a Rajasthani chef recognised for his heirloom recipes, hand-ground spices, sun-dried ingredients, and slow-cooking methods. He will present Marwari and Rajasthani thalis in both vegetarian and non-vegetarian formats. Each thali is intended to highlight the state’s culinary style with an emphasis on traditional preparation. Guests will be able to choose between curated thalis and à la carte items.

Guest chef Maharaj Lalaram added, “Tat, Mumbai mein khana banakar main apne parivaar dwara peediyon se banaye ja rahe khaane ka swaad sabke saath baant paunga. Har vyanjan mein hamare rasoi aur Rajasthan ki mitti ki khushboo hogi. Mujhe ummeed hai ki Mumbai ke log hamare rasoi ki daal baati choorma ya laal maas chakhkar muskurayenge, wahi mere liye sabse bada garv hoga.”
Chef Pai, Culinary Head, TAT Restaurant, said, “Collaborating with Chef Lalaram has been inspiring. His knowledge of traditional methods and my approach to modern presentation come together beautifully. This festival is really a celebration of India’s regional richness, told through food that feels like home. Our aim was to create something that stays true to Rajasthan’s heritage while appealing to today’s diner, and the menu for the festival does just that.”
TAT operates from Godrej One in Vikhroli, Mumbai, and focuses on offering diners a controlled sensory environment. The restaurant uses ingredients sourced from the regions associated with its dishes. The décor includes contemporary elements with visual references to Indian traditions. Music and service style are structured to support the overall dining approach.
