Mumbai’s competitive café segment has a new entrant with the launch of RumBabaa in Andheri on 26 April. Positioned as an all-day coffee-led concept, the brand integrates specialty coffee, food, desserts, and a vinyl-driven music format, reflecting a shift towards experience-based café models in urban markets.

RumBabaa’s operating model is built around extended dwell time rather than high table turnover, aligning with a growing segment of consumers seeking slower, experience-led dining environments. A vinyl-based music setup forms a central part of the space, with records played through the day to influence the overall customer experience and time spent in-store. The format is designed to transition into evening consumption with wine service, indicating a hybrid café-to-evening format increasingly seen in metro cities.

The design approach follows a minimal, functional layout inspired by Japanese aesthetics, focusing on natural materials and uncluttered interiors. This aligns with broader industry trends where cafés are prioritising spatial efficiency and calm environments to encourage longer visits.

The menu strategy reflects a mix of health-focused and indulgent offerings, catering to multiple dayparts. Breakfast options include dishes such as Longevity Bowl, Kodo Power Bowl, Rumbabaa Eggs, Krapow Omelette, and Tiramisu French Toast. As the day progresses, the menu expands into globally influenced plates including Kataifi Prawns, Bajra Tacos, Peruvian Chicken Pot Pie, and grain-based bowls, alongside Asian-inspired items such as sushi and rice-based dishes.

The pizza segment includes both classic and flavour-forward options, while desserts remain a key revenue driver with items like Ambe Turmeric Crème Brûlée and affogato-based combinations. A takeaway-focused “Take Me Home” section adds a retail component, allowing the brand to extend beyond dine-in consumption.

The beverage programme is positioned as a core differentiator, with a wide range of coffee formats including espresso-based drinks, cold brews, pour-overs, and flavoured variations. Products such as Dark Velvet Espresso Cold Coffee, Salted Caramel Espresso Oat Latte, and Iced Black Sesame Latte indicate a focus on customisation and premiumisation. Additional categories include matcha-based drinks, fruit-led cold brews, and dessert-style beverages.

A dedicated slow bar featuring V60 brews and manual coffee preparation methods further reinforces the brand’s focus on process-led coffee consumption, which continues to gain traction among urban consumers.

The venture is led by founders Sandeep G. Ailsinghani, Ayesha Dodeja, Mohitt Maalik, and Ankkitha Maithy, with Ankit Anand and Aditi Malikk overseeing brand and experience design. The team brings together backgrounds across hospitality, wellness, and operations, indicating a multi-disciplinary approach to concept development.

Aditi Malikk said, “Rumbabaa is a space that feels deeply personal to us. The idea was never to create just another café, but to build a place where people could pause, even if just for a little while. We’ve always believed that living mindfully shouldn’t mean giving up the small pleasures, a good cup of coffee, thoughtful sound playing in the background, a dessert you don’t feel guilty about, or a conversation that lingers.”

Ankit Anand added, “With RumBabaa, we wanted to create something that feels warm, thoughtful, and effortless; a space where every element, from the coffee to the food to the music, comes together naturally. It’s a place people return to, not out of habit, but because it simply feels right.”

RumBabaa’s entry highlights a broader shift in India’s café industry, where brands are increasingly combining food, beverage, retail, and cultural elements such as music to differentiate in saturated urban markets. The success of this model will depend on maintaining consistency, managing operational complexity, and sustaining repeat customer engagement in a highly competitive landscape.
