Restaurant India News: JW Marriott Prestige Golfshire Appoints Chef Manikandan Sivamoorthy as Executive Pastry Chef

JW Marriott Prestige Golfshire Resort & Spa has appointed Manikandan Sivamoorthy as its Executive Pastry Chef, strengthening its culinary leadership team as luxury hospitality operators continue to focus on elevated dining and banquet experiences.

Chef Mani joins the resort with more than two decades of experience in bakery and pastry operations across luxury hotels and resorts in India and international markets. In his new role, he will lead pastry and bakery functions across the property, overseeing dessert offerings for restaurants, banqueting operations, in-room dining, and events.

His expertise includes artisan breads, laminated viennoiserie, plated desserts, chocolate work, sugar artistry, and large-scale pastry production. The resort said his operational experience also covers cost management, inventory planning, and food safety compliance.

Before joining the Bengaluru property, Chef Mani worked as Executive Pastry Chef at a luxury resort in Udaipur, where he managed pastry operations for a large-format hospitality property with extensive banquet infrastructure. He has also held senior pastry leadership positions in Pune and Bengaluru, managing multi-outlet pastry operations and leading teams handling high-volume dining and events.

His international assignments include hospitality projects in the Maldives, Mongolia, and Seychelles, where he worked on pastry programs for luxury resorts and city hotels. Earlier in his career, he was part of pre-opening teams across hospitality properties in Hyderabad, Chennai, Mumbai, and Kochi, gaining experience in production bakeries and banquet-focused operations. Chef Mani has completed advanced workshops with pastry specialists and holds an MBA along with a Bachelor’s degree in Tourism and Hospitality Management.

Chef Mani's appointment will focus on refining dessert menus across dining venues while supporting the property’s broader culinary and hospitality operations.
