
Hyatt Regency Delhi has introduced “Travel Diaries by Chef Zhang,” a rotating regional Chinese dining experience curated by Chef Zhang Hongsheng. The menu is available at The China Kitchen until 23rd November 2025, with lunch served from 12:00 PM to 3:00 PM and dinner from 7:00 PM to 11:30 PM. The format offers guests structured access to regional dishes not commonly found on mainstream Chinese menus in India.
The concept focuses on representing culinary traditions from provinces such as Sichuan, Guangxi, Shandong, Beijing and Hunan. The dishes reflect Chef Zhang’s research, travels and long-standing familiarity with traditional cooking methods. The menu incorporates styles such as claypot cooking, dry-heat techniques and blends of regional spices associated with specific Chinese provinces.
The lineup includes well-known dishes such as Peking Duck, Sichuan-style Dumplings, Mapo Tofu, Guangxi-style Claypot Lamb and Shandong Wok Tossed Chicken, along with hand-crafted dim sums such as Crystal Dumplings and Prawn Shao Mai. Guests can also observe the preparations through The China Kitchen’s open kitchen format, aligning with its “Dining in the Kitchen” approach.
Chef Zhang Hongsheng explains the idea driving the menu: “Cooking is my passion. This ‘Travel Diaries’ menu is a tribute to the vast, beautiful history of China’s food. Each dish is a story, a moment of tradition thoughtfully reimagined. Our aim is to transport our guests, one flavourful bite at a time, to the authentic culinary landscape of my home country.”
The menu includes allergen indicators for gluten, nuts and other dietary considerations. The estimated price range for two diners is between Rs 4,500 and Rs 6,000, exclusive of taxes, alcohol and service charges.
Through this limited-period offering, Hyatt Regency Delhi aims to present structured access to regional Chinese cuisine while reinforcing its broader focus on immersive and well-defined dining experiences.
