
FOO, operated by Pebble Street Hospitality, has expanded its presence in Mumbai with the launch of a new outlet at Sky City Mall in Borivali. The opening marks the brand’s ninth restaurant in Mumbai and its 14th location across India, reflecting the company’s continued focus on expanding in high-footfall urban retail destinations.
The new restaurant spans 4,400 sq. ft. and has seating for 100 guests. Positioned within the mall with visibility from surrounding corridors, the outlet features a layout that integrates indoor and outdoor dining areas. A double-height outdoor section forms a key visual element of the restaurant. A sequence of repeating arches connects the indoor and outdoor spaces and serves as a defining design feature of the property.
The outdoor seating area has been developed with a landscaped concept that includes organic seating layouts, minimal finishes, and curated greenery, designed to contrast with the mall’s structural geometry. Inside, the restaurant offers a more compact dining setting with layered finishes, fixed seating along angled walls, and flexible seating arrangements. The design culminates in a bronze mirror installation that visually extends the space, while a perpendicular bar functions as a central service and social area.
The restaurant’s menu includes more than 100 varieties of Asian tapas, spanning dishes such as sushi, dim sum, and small plates influenced by Japanese, Nikkei, and Peruvian culinary styles. The menu has been developed by culinary expert Eric Sifu, whose approach focuses on contemporary Pan-Asian flavours. Signature dishes include FOO Blue Butter Japanese Fried Rice with FOO Yellow Curry, Nikkei Avocado Uramaki, Truffle Togarashi Black Rice Maki, Truffle Lobster Dumplings, and Charcoal Har Gow with gold dust. Additional dishes include Wasabi, Truffle & Edamame Dumpling and Crispy Spicy Thai Lotus Root, reflecting a plant-forward approach to Asian flavours.
To cater to diverse dietary preferences, the restaurant also offers a dedicated Jain menu. The menu includes options such as Udon Clear Soup, Nutty Sesame Salad, Foo Yam Bean Uramaki, and Pan-Fried Noodles in Chilli Oil, designed to provide a Pan-Asian dining experience aligned with Jain dietary requirements.
The beverage program includes a range of cocktails such as Yuzu Negroni, FOO King, Florista, Miso Sour, and Pickled Picante, along with boba tea options and a curated selection of sake. The dessert menu includes Mount Foo-Ji, a mountain-shaped dessert platter featuring five portions and a concealed sweet component.
