Restaurant India News: Depot48 Introduces Khasta, a Delivery-Only Kulcha Concept in Delhi

Depot48 has expanded its portfolio with the launch of Khasta, a delivery-only food concept focused on reworking the traditional tandoori kulcha into a complete, self-contained meal. The move reflects Depot48’s broader approach to innovation rooted in cultural familiarity, adapting legacy formats to suit current consumption patterns.

Khasta is built around tandoor-cooked kulchas that are filled, sealed, and designed to function as standalone meals. The menu combines well-known North Indian flavours with less conventional pairings, allowing the brand to address both comfort-driven demand and experimentation within a familiar base. Offerings include Amritsari Aloo-Pyaz Kulcha with Amritsari Chhole, Butter Chicken Kulcha with Makhni Gravy, and Delhi Mutton Nihari Kulcha, alongside variations such as Mushroom Truffle Kulcha with Mirch Ka Salan, Pulled Jackfruit and Podi Kulcha, Goan Chorizo Blue Cheese Kulcha, and a Gur-Dal Halwa Dessert Kulcha.

From an operational standpoint, texture and structure form the foundation of the concept. The kulchas are slow-prepared and cooked in a tandoor to achieve crisp exteriors and layered interiors capable of holding slow-cooked fillings. The format is designed for delivery efficiency, maintaining quality during transit and allowing for easy reheating without additional accompaniments or plating.

The name Khasta references a commonly understood North Indian texture associated with crispness and richness. While the term does not have a direct English translation, it communicates both sensory satisfaction and emotional familiarity, anchoring the brand within Punjabi household cooking traditions.

Positioned as a full-meal delivery option, Khasta is aimed at everyday dining occasions where convenience and portion completeness are key factors. The format supports use cases such as home dining, informal group meals, and seasonal consumption periods when delivery demand increases.

Vikas Narula and Girjashanker Vohra, Founders of Depot48, said, “We both grew up in Punjabi households where food was generous by default, it was meant to warm people, be shared, and leave you feeling full in every sense. With Khasta, we wanted to translate that instinct into a format that works for how people eat today. It’s familiar food, made thoughtfully, that doesn’t ask for ceremony or context. You can eat it anywhere, share it easily, and still feel completely satisfied.”

Several of the fillings are derived from family recipes and home-style preparations, adapted to suit the kulcha format while maintaining flavour integrity. The tandoor remains central to production, ensuring consistency and depth across variants.

Khasta represents a delivery-first extension that prioritises operational clarity over reinvention. Rather than repositioning traditional food through heavy modernisation, the concept allows established culinary practices to evolve in line with delivery-led lifestyles, while retaining their original context and appeal.
