
Aure Heer has opened at Panchshila Rendezvous in Malviya Nagar, bringing Chef Mahabir's decades of culinary expertise to Delhi's dining scene. Inspired by India's lesser-known regional flavours, the restaurant celebrates heritage recipes, signature spice blends, and traditional cooking techniques that have shaped the chef's journey.
The name Aure Heer reflects rarity, craftsmanship, and timeless excellence, symbolising years of dedication before stepping into the spotlight. Spanning 2,800 sq. ft., the restaurant features warm, earthy interiors, handcrafted décor, an open kitchen, and a private dining space designed for intimate gatherings.
Originally from Uttarakhand, Chef Mahabir comes from a family of chefs and has built his culinary philosophy on authenticity and tradition. A defining feature of his menu is his signature "Magic Masala"—a proprietary blend of 35 carefully selected spices that delivers the distinctive flavours at the heart of Aure Heer.
Chef Mahabir weaves precision, memory, and craft into cuisine where every plate narrates a tale. He believes, “"There are no shortcuts to great taste. Perfection is achieved through patience, passion, and respect for every ingredient. Aure Heer is a reflection of this belief and of the journey that has shaped me over the years. Every dish on the menu carries a story, a memory, and the lessons I have learnt throughout my career. Through Aure Heer, I hope to share not just food, but the craft, tradition, and heart that go into creating it," says Chef Mahabir.
For Chef Mahabir, the guiding principle is simple yet profound: "Before a dish reaches the table, it must first reach the heart."
The menu at Aure Heer is a love letter to North Indian cuisine, reimagined through Samosa Golmaal, Paneer Tikka, Cheesy Mushroom Bomb, Vermicelli Vilayati Kurkuri, Goat Cheese Beetroot Shammi, Murg Ki Khass Kaliyan, Farid Flam, Sarso Olive Macchi Tikka, Lahsuni Palak Chenna, Paneer Ishq Vishk, Classic Butter Chicken, Chicken Tikka Masala and many more.
Beverages at Aure Heer are treated with the same precision as the food. Speciality coffees and matcha preparations anchor the non-alcoholic program, alongside a thoughtful mocktail menu drawing on Indian ingredients such as Watermelon Shikanji, Kokum Banta, and Aam Panna Banta. Fresh lime sodas, curated juices, and seasonal drinks complement the meal without competing with it. The dessert includes Saffron Tres Leches, Sweety Singh, Jalebi Rabri, Deconstructed Shahi Tukda and Saffron Phirni Brûlée.
