
Acclaimed actor Sanjay Dutt makes his foray into hospitality with the launch of Solaire, his first-ever restaurant at Grand Hyatt, Kalina, Mumbai.
Solaire is envisioned as an immersive dining destination that seamlessly transforms with the day. By daylight, it offers leisurely, refined dining; by evening, it evolves into an elegant dinner spot; and after dark, the space comes alive with cocktails, music, and a high-energy bar. Unlike venues that tilt solely toward cuisine or nightlife, Solaire puts food at the forefront showcasing bold and refined global gastronomy—while amplifying the experience with a vibrant bar and atmosphere.
Designed by a renowned boutique studio, the space draws inspiration from the sun and its elements—warmth, fire, earth, and flow. Guests are welcomed into a setting defined by a volcanic stone-and-brass open kitchen radiating theatrical energy, a mosaic cocktail bar echoing Moroccan tile artistry, plush velvet upholstery, curated artworks, and handcrafted furniture.
The menu developed with a Michelin-experienced chef, is a vibrant tapestry of cultures and flavors:
• Deconstructed Classics – Inspired by Sanjay Dutt’s travels, where tradition meets reinvention.
• Indian Spice & Soul – Slow-simmered curries enriched with heritage masalas.
• Mediterranean Vibrance – Mezze and housemade staples like tahini, yogurt, and za’atar.
• Pan-Asian Fire – Wok-tossed dishes bursting with umami and heat.
• European Elegance – From artisanal burrata and aged Parmigianos to French patisserie paired with Italian coffee.
At the bar, cocktails double as cultural narratives. Highlights include The Solaire Star with a color-shifting botanical mix of lemongrass vodka and blue pea tea, Aachari Berry with gin-based tribute to India’s pickling traditions, Tamarind Picante with Tequila ignited with lemongrass and chilli, Black Panther Party with bold rum and berry blend with activated charcoal, Amazonia with Brazil’s rainforest captured in cachaça, açaí, and passionfruit.
With its inventive zero-proof menu and globally inspired storytelling, Solaire’s bar mirrors the kitchen’s ethos with craft, culture, and creativity.
