
Known for their inventive experiments with artisanal coffee, Maverick & Farmer has introduced a new coffee menu called Jaggeries of India. More than merely a selection of beverages, the menu pays respect to the age-old craft of jaggery production. By offering this limited-edition menu at their Ulsoor, Koramangala, and Cunningham locations, Maverick and Farmer welcomes coffee enthusiasts in Bangalore to discover India and its astounding diversity.
This menu is the result of six months of travel, tasting, and refinement rather than a quick fix. In order to find five different varieties of jaggery, each with a distinctive profile and a heritage-based backstory, the Maverick & Farmer team searched India's jaggery heartlands, which include Karnataka, Kerala, Goa, West Bengal, and Maharashtra.
The objective with this choice was very clear: to provide a coffee experience that embodies this variety of flavors and to showcase the amazing flavor profiles of Indian jaggery, demonstrating that not all jaggery is created equal.
Jaggery is often dismissed as just a generic sweetener, but it’s so much more. During our research and sourcing for the menu, we discovered its incredible diversity—each variety carries a distinct regional identity, flavour profile, and craftsmanship. He adds, “Jaggery, with its deep sweetness, can easily overwhelm a coffee’s delicate notes. That’s why we’ve been deliberate in how we use it. Through techniques like jaggery foam, we’re able to introduce its complex flavors without letting it overpower the coffee itself.
