Barry Callebaut unveils new chocolate variety in India

This chocolate is specially developed from the red Ruby cocoa bean.

Barry Callebaut, the Belgium chocolate and cocoa products manufacturer, has launched a new variety of chocolate named Ruby chocolate. This chocolate is specially developed from the red Ruby cocoa bean. 

Chocolates such as Gold-caramel chocolate and Ecl1pse Belgian Milk Chocolate have also been introduced.

Chef Sachin Wilfred said, “This genuine Belgian milk chocolate has only 1% added sugar and nothing artificial. Ecl1pse has about twice the milk and cocoa content compared to regular milk chocolates. It is darker, smoother, more intense, and creamier than any other milk chocolate. By using this chocolate one can reduce the sugar content in all popular chocolate desserts and pastries by 20% to 50%.”

“Gold caramelised chocolate is made with caramelised sugar and caramelised milk, Gold has an intense yet balanced caramel chocolate taste, with rich notes of toffee, butter, cream and an exciting dash of salt. Gold has a unique, warm caramel and pale amber colour, with a golden hue,” he added.
