Born and raised in Delhi, Chef Vardaan Marwah is a culinary virtuoso whose journey has been
marked by relentless passion, innovation, and a drive for perfection. His dynamic career,
spanning continents and celebrated kitchens, reflects his ability to blend creativity with a
profound understanding of flavours and techniques.
Vardaan's culinary journey began with a passion for pastry, which he nurtured at the
International Institute of Culinary Arts (IICA). His relentless drive led to a
transformative stint at the two-Michelin starred Gaggan in Bangkok, an experience that
shaped his philosophy and introduced him to the world of fine dining.
He later worked alongside Michelin-starred Chef Suvir Saran as Executive Chef at The House
of Celeste, honing his craft under world-class mentorship.
Vardaan's career has been marked by milestones: rising from Executive Pastry Chef to
Executive Chef at Rooh in New Delhi, launching Glaze Factory—his home bakery—during the
pandemic, and earning the title of ‘Chef vs Fridge’ Season 3 champion, which showcased his
composure and creativity under pressure.
At FARRO, his latest brainchild and Pune’s newest progressive dining destination, Chef
Vardaan takes center stage as Chef Partner, redefining experiential dining with a menu of
globally inspired dishes. For Vardaan, the kitchen is more than a workspace—it’s a canvas
where his creativity flourishes, resulting in dishes that tell a story of flavours,
textures, and cultures. Beyond FARRO, Chef Vardaan is a man of many talents. He is also
Culinary Director for popular Pune establishments like Oi Brewhouse, Murphie’s, and Qora.
He is not just a chef—he’s a visionary, redefining how food connects with culture,
creativity, and community.
