
Zaya Indian & Persian Kitchen has appointed Chef Mahesh Dhami as Executive Chef as the restaurant looks to strengthen its position in the premium Indian and Persian dining segment in South Texas.
Chef Dhami brings more than 14 years of experience across luxury hospitality, Indian fine dining, and modern gastronomy. In his new role, he will oversee culinary operations at the McAllen-based restaurant, including menu development, kitchen operations, staff training, food quality management, and guest dining experience initiatives.
Before joining Zaya, Chef Dhami worked at Musaafer by Spice Route, the Michelin-recognized Indian fine dining restaurant in Houston known for its modern interpretation of Indian cuisine. During his tenure, he progressed from Junior Sous Chef to Sous Chef within one year, supported by his operational and culinary performance.
Chef Dhami completed his culinary training through the Hotel Operations Management Training (HOMT) programme at The Taj Mahal Hotel. He also trained at established hospitality brands including Masala Art and Machan, gaining experience in banquet operations, luxury hospitality management, and regional Indian cuisine.
His culinary expertise spans Awadhi, Mughlai, Rajasthani, and South Indian cuisines, combined with modern presentation techniques and tasting-menu formats. Industry observers note that restaurants specialising in Indian cuisine in international markets are increasingly focusing on regional authenticity while adopting contemporary dining formats to attract evolving consumer preferences.
