Fairmont Mumbai has promoted Saif Shaikh to the position of Assistant Director of Food & Beverage for both Fairmont Mumbai and Roswyn, A Morgans Originals Hotel. Saif has been instrumental in enhancing the food and beverage offerings across the hotels' restaurants, bars, banquet operations, and guest dining experiences.

The appointment underscores the management's confidence in his strong operational capabilities, commercial understanding, and proven ability to elevate guest satisfaction while driving innovation across multiple dining formats. Bringing more than 11 years of experience in the luxury hospitality sector, Saif has built an impressive career with leading hotel brands such as Fairmont, Ennismore, Hilton Garden Inn, JW Marriott, Grand Hyatt, and Sofitel. Over the years, he has successfully led multi-venue operations, strengthened revenue performance, improved profitability, and developed high-performing hospitality teams.

Before joining Fairmont Mumbai, Saif served as Director of Restaurants & Bars at JW Marriott Pune, where he managed several dining venues and led the successful launch of Tao-Fu, Pune's first authentic Sichuan restaurant. He also held key leadership roles at Grand Hyatt Mumbai, overseeing acclaimed outlets such as China House and Celini, further refining his expertise in luxury dining and guest engagement.
