Goa’s craft beer landscape is getting a fresh addition with the launch of Lizard King Brewing Co., a brewpub that officially opened its doors on October 26, 2025. The concept has been developed around a simple yet unconventional idea—bringing together beer, music, and community under one roof.

The idea for Lizard King Brewing Co. didn’t emerge from a corporate boardroom but from a ride through a forest trail, a motorbike, and a chance encounter with a monitor lizard. That experience became the inspiration behind creating a space that celebrates originality, risk-taking, and rebellion.

“It’s that moment when a monitor lizard on the forest road looked back at me like it owned the place. That’s when I knew this brewpub had to be here, raw, fearless, and impossible to ignore,” says George Jacob, Founder and Brewmaster, Lizard King Brewing Co.

Jacob describes the brewpub as a space where beer and rock music converge. Instead of tropical cocktails or casual beach vibes, Lizard King Brewing Co. aims to deliver a raw, performance-driven experience that reflects Goa’s growing appreciation for craft beer.

The beer menu has been built to emphasize quality and individuality. The selection features styles that are classic yet experimental, from the Apple Cider, crafted using Himachal apples and aged with oak, to the Mango Cider, a blend of Alphonso mango and apple offering a tropical twist. The Pilsner brings a crisp Saaz hop bitterness, while the Best Bitter pays homage to traditional British ales. Other highlights include the Irish Stout, Belgian Wit, Pale Ale, and a Launch Special Saison, each designed with a distinctive brewing identity.

“Every beer we pour comes with the energy of the first chord at a sold-out rock gig. We don’t whisper—we announce,” says George. “I’ve brewed in the UK, in India, across cask ales, sours, IPAs, and fruit-forward experiments. But this—this is our loudest record yet.”

Jacob’s journey as a brewmaster spans over a decade, marked by international exposure and award-winning creations. A Brewlab UK–certified brewer, he has worked with well-known breweries such as Darwin, Mordue, Sonnet43, and Three Kings in England, in addition to Indian brewpubs in Bangalore, Hyderabad, and Pune. His Grapefruit IPA won a competition sponsored by Castle Eden Brewery, Head of Steam, and Brewlab in the UK. In India, he developed popular brews like the Mango Duet Cream Ale at Zero40 Brewing and collaborated on experimental projects such as the Mango Jalapeño IPA with Effingut. His work has been recognized for blending technical precision with creative flair.

The food menu complements the beer lineup without overshadowing it. Designed in consultation with a leading chef, the offerings reinterpret pub classics with a local touch. Items such as Steak & Onion Pie, Chicken & Mushroom Pie, and Cottage Cheese & Pea Pie are served with salad and gravy for comfort-driven appeal. The Fish & Chips, made with Chonak (sea bass) in a stout and vodka batter, and the Chicken Fried Steak with white gravy, reflect the same balance of familiarity and innovation.

“Food has to surprise you the way a killer solo does,” George explains. “From pies to steaks, everything here is designed to play alongside the beer. Nothing predictable, nothing safe—every dish is a power chord built to move you.”

The beverage program expands beyond beer with beer-forward cocktails, including a stout espresso martini and cider spritz, supported by a sourcing philosophy that prioritizes local seafood, produce, and Indian malts. The approach ensures freshness and reinforces the brand’s community-driven outlook.

The interior design of the brewpub reflects its production-first identity. Conceived by George himself, the layout centers on the visible brewing tanks, polished steel pipes, and fermentation vessels that are intentionally left on display. The 28-seat setup promotes an intimate experience, encouraging guest interaction and giving visitors a clear view of the brewing process.

An adjoining open space extends the bar area, allowing natural light through large windows and creating a relaxed atmosphere. Industrial steel finishes are balanced with dark wood elements, while walls feature vintage rock posters and a custom mural by a Hyderabad-based artist, who is also a brewer. The mural maps out the brewing process visually, connecting tank to tap.

“The tanks, the mural, the limited edition rock concert posters—they’re not decor, they’re instruments. Brewing here is visible, audible, alive,” George says.

Designing the brewery came with its share of technical challenges. “You’re balancing engineering with atmosphere. Every pipe, every light, every wall had to work like a stage setup—technical, but built for showtime,” George notes. Space optimization, ventilation, and process flow were handled with care to maintain both efficiency and aesthetics. “We weren’t just installing equipment—we were composing a symphony of steel, steam, and swagger.”

Beyond its physical space, Lizard King Brewing Co. positions itself as a community-led brewpub. It is envisioned as a gathering point for locals, travelers, and enthusiasts. Weekly rider meet-ups, guest-curated music nights, and open-floor interactions are part of the plan.

“We’re not here to open just another bar—we’re here to headline your night,” George says. “Every guest here is in the front row, every night is a gig. Strangers don’t just drink together—they become part of the band. Every beer freshly poured is an anthem.”

Operationally, the model emphasizes simplicity and engagement. The service will be walk-in only, with quick ordering and playlists that evolve through the night. The focus, George says, will remain on cultivating a loyal audience in the first year before expanding to new cities.

“The first year is about building the tribe,” George adds. “After that, we take the tour on the road—new cities, new stages, new communities. Goa is just the opening act.”

Lizard King Brewing Co. represents a new chapter in Goa’s craft beer movement. By merging craftsmanship with a music-inspired energy, the brewpub aims to offer not just drinks or food, but an experience built on creativity, precision, and collaboration.
