Restaurant India News:  Fiori Introduces Dedicated Matcha Menu in Collaboration with Yūzen Matcha

Fiori has partnered with Yūzen Matcha to introduce a new menu highlighting ceremonial-grade matcha sourced directly from Japan. Designed for both seasoned matcha drinkers and first-time consumers, the initiative brings structured innovation to Lonavala’s café culture by showcasing matcha’s versatility in flavor, texture, and presentation.

The concept takes visual and thematic inspiration from Japanese artist Yayoi Kusama, known for her work with repetition, infinity, and layered patterns. Similar to Kusama’s approach to depth and reflection, Fiori’s matcha menu is built around layered flavor experiences. Drinks reveal complexity with each sip, aligning art and beverage design.

The menu includes four signature offerings. The Iced Matcha Latte, referencing Kusama’s 1959 work No. F, is built on hidden layers of complexity. Apple Matcha Cloud, influenced by Kusama’s Infinity Nets, combines apple juice and matcha foam for a gradient texture. Matcha + Blueberry Jam, inspired by Infinity Mirrors, layers earthy matcha with fruit sweetness. Matcha and OJ, drawing from Fireflies on the Water, pairs citrus-forward orange juice with matcha for a balanced profile.

Suraj and Sanskriti Gupta, Founders, Fiori, explained, “The idea to include matcha in our offerings came from wanting to bring something unique and thoughtfully crafted to our guests. A lot of people in our community are looking for healthier alternatives to coffee and enjoy trying new experiences. Matcha felt like the perfect fit, it offers a clean, balanced caffeine boost without the jitters, and it has such a rich cultural heritage. We’re also amongst the first to introduce matcha in Lonavala in a focused way, which felt exciting and meaningful to us. It gave us the opportunity to set the tone for how matcha is perceived here and to build curiosity around it. Plus, it allowed us to experiment with different flavors, textures, and presentations, which is something we’re always passionate about at Fiori.”

The launch underscores how smaller hospitality brands are leveraging niche beverages like matcha to diversify offerings, tap into consumer interest in wellness-driven alternatives, and create differentiated experiences. With Lonavala seeing rising demand for specialty food and beverage formats, the new menu positions Fiori as one of the early adopters in building consumer awareness around Japanese matcha culture in the region.
