One8 Commune Operator True Palate Hospitality Bets Big on Experience-Led Dining

True Palate Hospitality is preparing to expand its portfolio of experience-led dining brands across India and international markets as it strengthens its presence in the premium hospitality segment.

Founded in 2019 by Vartik Tihara and Ankit Tayal, the company currently operates brands including One8 Commune, Neuma, and Pincode by Chef Kunal Kapur. Its restaurant network spans Delhi-NCR, Mumbai, Hyderabad, Kolkata, Jaipur, Goa, Indore, Ludhiana, Mohali, and Dubai.

The company said its expansion strategy is centred on creating hospitality brands that combine food with design, culture and community experiences, reflecting evolving consumer preferences.

Vartik Tihara, Co-founder and Director, True Palate Hospitality, said, "Consumers are choosing restaurants not just for the cuisine, but also for spaces that reflect their lifestyle and community, and that give them a reason to return beyond the food."

He added that this shift in consumer behaviour led the company to focus on building brands with distinct identities instead of simply increasing the number of restaurant outlets.

According to Tihara, restaurants today have evolved beyond dining destinations and increasingly serve as venues for social gatherings, celebrations and community engagement.

Ankit Tayal, Co-founder, True Palate Hospitality, said, "From the very beginning, our approach has been to build hospitality brands with a strong sense of identity. Instead of chasing trends, we believe in building concepts that can evolve with consumers while remaining authentic to their core."

To support its expansion plans, the company intends to invest in technology, logistics, quality management, talent development and operational processes.
