Fieno has opened in Colaba, Mumbai, adding a regional Italian dining concept to the city’s restaurant market. Located inside the heritage Amarchand Mansion, the restaurant combines Italian cuisine, a wine-led beverage programme and a dining format centred on longer, table-led meals.
The menu focuses on regional Italian cooking and includes handcrafted pastas, wood-fired pizzas and charcoal-fired grills.
Executive Chef Bruno Ferrari leads the culinary programme, with Head Chef Joao Pedro working alongside him. Ferrari has worked across Michelin recognised restaurants and culinary projects in Europe and Asia, while Pedro has experience across Italy and Sweden. The kitchen focuses on regional recipes, seasonal ingredients and traditional cooking techniques.
The beverage programme includes a 120 bottle wine cellar designed by Nikhil Agarwal, featuring wines from Italian regions alongside selections from other markets. The cocktail menu is structured around Terra, Mare and Terroir, with drinks including Mediterranea, Amalfi Gold Coast and Sicilian Fire.
The restaurant occupies Amarchand Mansion, with interiors designed by Shruti Jalan and Neesha Alwani of ns*a Architecture & Interiors. The design retains original elements of the building, including jack-arched ceilings, stone walls, chandeliers and historic iron columns, while incorporating warm materials and handcrafted details.
Pranav M Rungta, Founder, Churchgate Hospitality Pvt. Ltd. (CHPL), said, "With Fieno, we wanted to create a restaurant that captures the feeling of dining in the Italian countryside, where meals are never rushed, conversations naturally linger and every gathering around the table becomes an occasion in itself. Having built concepts like Otoki, Nksha and Tamak, we have always believed that memorable restaurants are shaped by the experiences they create. With Fieno, our vision was to offer guests a place where exceptional food, warm hospitality and time spent together are equally celebrated."
Bruno Ferrari, Executive Chef, Fieno, said, "At Fieno, our menu is a celebration of Italy's regional diversity and the simplicity that defines its cuisine. We focus on exceptional ingredients, traditional techniques and recipes that have stood the test of time, allowing each dish to tell its own story. Our hope is to offer guests an experience that feels authentic, comforting and unmistakably Italian."
Sommelier Nikhil Aggarwal of All Things, said, "The wine programme at Fieno has been built to reflect the diversity and character of Italy's wine culture. With over 120 labels available by the bottle and the glass, guests can journey through renowned regions and indigenous grape varieties while also exploring a carefully selected collection of wines from around the world. Combined with thoughtful pairings, warm service and an uncompromising focus on the guest experience, we hope Fieno becomes a destination for anyone who loves great wine."
Shruti Jalan, Principal and Co Founder, nsa Architecture & Interiors*, said, "Fieno gave us a rare opportunity to work with a building that already had incredible character. Our approach was to honour its original architecture while layering it with the warmth and simplicity of the Italian countryside, creating a space that feels timeless, inviting and encourages guests to slow down."
The launch adds another Italian-focused restaurant to Mumbai’s premium dining segment, with Fieno using regional cuisine, a wine programme and a restored heritage setting as the core components of its positioning in Colaba.
