Olive Bar & Kitchen, Bandra, celebrates its 25th anniversary with its most ambitious transformation. As one of India’s most influential hospitality brands, Olive’s longevity speaks for itself.  This season, guests can experience the institution anew through the bold, rebellious vision of its newly appointed Executive Chef, Alessandro Piso, a rising name already making waves among industry insiders. Piso’s arrival ushers in a fresh chapter for the iconic Mediterranean restaurant, one that honours its legacy while fearlessly redefining its menu and breaking conventions.

“Olive has always been about more than just food; it's about moments that stay with you long after the last bite. Celebrating 25 years is a wonderful milestone, but for us, it is really about staying true to who we are while exploring new ideas. With Chef Alessandro joining us, the kitchen feels full of fresh energy, and we have created our most playful and inventive menu yet, honouring our legacy while also embracing exciting new directions,” said AD Singh, Founder of Olive Bar & Kitchen.

For the past two and a half decades, Olive has set the bar for luxury dining and experiential lifestyle moments across the nation. Piso’s decorated career spanning Michelin-starred institutions in Europe, Singapore, Malaysia, and Italy underscores his creative authority. 

“We made them for 25 years. Now it’s time to redefine them. My goal is to keep Olive’s soul alive while giving diners something adventurous and unexpected. Food is about stories - where you come from, where you’re going. At Olive, we celebrate every twist and turn in that journey,” added Chef Alessandro Piso, Executive Chef, Olive Bar & Kitchen.

The new menu is a clear statement of intent bold, inventive, and deliberately unpredictable. Classic Mediterranean dishes return in refreshed, imaginative forms. Think cheese-stuffed Focaccia al Formaggio, a generous Cold Cuts Platter, vibrant salads like Beetroot with balsamic pearls, and cold appetisers such as Burrata Hummus. Playful hot starters like Olive Ascolana and Mediterranean Manti set the tone, while house-made pastas and pizzas bring Italian authenticity with clever twists, from Gnocchi alla Genovese with smoked salmon to a pesto-driven Genovese pizza topped with mozzarella, smoked salmon, pine nuts, and basil oil.

The reinvention deepens with the mains as Piso’s craftsmanship shines through Eggplant Moussaka, three-day marinated lamb, Chilean Sea Bass with beurre blanc, and Espetada skewers spanning New Zealand lamb to Mediterranean-style prawns. With this relaunch, Olive Bar & Kitchen, Bandra, reinforces its status as a frontrunner in experiential dining.
