Restaurant India News: JW Marriott Goa Appointed Tanvi Palshikar as Pastry Chef, Blending Design Sensibility with Dessert Craft

In a move that underscores its focus on craft-led luxury, JW Marriott Goa has appointed Tanvi Palshikar as Pastry Chef, an industry professional whose journey from interior design to haute patisserie reflects both reinvention and resolve. 

Her culinary career began as a cake artist, where she earned recognition for transforming sketches into intricate edible creations. The shift into professional hospitality took shape at JW Marriott Pune, where she progressed from Chef de Partie to Junior Sous Chef and eventually Pastry Sous Chef. There, she oversaw pastry operations across outlets from boutique pastry counters and indulgent brunches to large-scale banquets catering to over 2,000 guests daily. Alongside operational leadership, she managed audits, menu development, guest engagement and team mentoring, becoming a cornerstone of the pastry division.

Expanding her leadership canvas, Tanvi later headed pastry operations for a Pune-based hospitality group, managing two restaurants and a B2B vertical. Her focus sharpened on dessert R&D, training and presentation, all while maintaining quality consistency and cost efficiency.

Within Marriott International, she has been recognised as a Leading Lady Chef and completed a specialised Bakery & Pastry programme through the Lavonne × Marriott collaboration. At JW Marriott Goa, Tanvi now leads a dynamic pastry team, bringing her signature blend of design sensibility, technical precision and warmth to the resort’s dessert philosophy.
