Shilton Hospitality has appointed Chef Antony Rohan Parish as Corporate Chef for Watson’s Cantina. 

With over 28 years of experience across hospitality, corporate food operations, and international cruise lines, Chef Antony brings deep culinary expertise and a strong track record in operational leadership.

In his new role, Chef Antony will lead Watson’s Cantina’s culinary strategy, focusing on menu development, brand consistency, kitchen efficiency, and guest-centric dining experiences across all outlets. 

As part of his mandate, he will also spearhead the development of an authentic and contemporary Latin American-inspired menu, further strengthening Watson’s Cantina’s culinary identity.

“I am excited to join Shilton Hospitality and take on the responsibility of shaping Watson’s Cantina’s culinary journey. I look forward to working closely with the teams to build a strong, consistent, and guest-focused food experience that supports the brand’s growth and vision,” he shared.

Chef Antony’s career spans senior leadership roles across diverse hospitality environments. His professional journey includes serving as Vice President – Operations at Trip Villas International Pvt. Ltd., Corporate Chef at MRG Group, and Senior Sous Chef with Carnival Cruise Inc., Miami. Across these roles, he has successfully managed large teams, high-volume kitchens, and complex, multi-unit operations.

Chef Antony’s appointment marks an important step in Watson’s Cantina’s evolution under Shilton Hospitality. Guests can look forward to enhanced menus, improved consistency, and a refined dining experience that reflects the brand’s commitment to quality and innovation.
